Grateful to my donor, I feel great!.

 It is the holidays in some places. Thinking about renal friendly foods. Everytime at Thanksgiving our in center would have stringent rules about what to eat and not to eat during the holidays. We did find some pretty good desserts in some of the renal cookbooks. A cranberry upside-down cake that was excellent. Anyone want to share a favorite renal friendly food or recipe?

Admin for IHateDialysis 2008 - 2014, retired.
Jenna is our daughter, bad bladder damaged her kidneys.
Was on in-center hemodialysis 2003-2007.
7 yr transplant lost due to rejection.
She did PD Sept. 2013 - July 2017

I'm going to have a piece of REAL Pumpkin Pie and then go to dialysis. 

The receipe they gave me for pumpkin cheese cake made me laugh.... 2 tablespoons of pumpkin.  NO!  That is where I put my foot down.  I'm having a real piece of pumpkin pie and I can't wait.

Me too Rerun - with homemade whipped cream to boot. 

Then it's time to hook up to the NxStage and watch football.   ;D

You know there is a pie recipe done with carrots that taste like pumpkin pie.

You know there is a pie recipe done with carrots that taste like pumpkin pie.

I wish I could be the judge for theese 2 pies.  AND if I could not tell the difference then I would be sold.

I haven't eating turkey stuffing, with sausages in it, for a long time.  I am really craving that for the holidays.  Our nutritonist gave us a recipe for Pumpkin Cranberry Bread:
Ingredients:
2 1/2 cups of all purpose flour
2 teaspoons pumpkin pie spice
2 teaspoons baking powder
2 eggs
2 cups sugar
1 3/4 cups canned pumpkin puree
1/2 cup vegetable oil
1 cup fresh or frozen whole cranberries

Directions:
Preheat over to 350 F
Combine flour, pumpkin pie spice & baking powder in a large bowl
Combine eggs, sugar, pumpkin puree and oil in a small mixing bowl.
Beat until blended.
Add pumpkin mixture to flour mixture.
Stir until just moistened then fold in cranberries.
Spoon batter into 2 greased 9" x 5" loaf pans.
Bake for 55 to 60 minutes.
Cool in pans for 5 to 10 minutes.
Remove to wire rack to cool before slicing.

Calories 187
Protein 2 g
Carbs: 31 g
Fat 6 g
Cholesterol 21 mg.
Sodium 45 mg.
Potassium 69 mg.
Phosphorus 75 mg
Calcium 46 mg
Fiber 1.1 g
