Seems like every single time Joe goes to dialysis he tells me they tell him, 'eat more rice, eat more pasta.' He already eats big servings of rice a few times a week - why does he need to eat more? Is there something important that I'm not aware of?

No he actually needs to lose weight. That's why I find it so weird. That and he's diabetic so he doesn't really need to be eating additional carbs.
What about pasta with a cream based sauce?? Cream has negligable potassium, not sure about phosphate though. I make a nice creamy bacon pasta with pesto. I normally use tomato pesto but it would also be nice with basil pesto which should be fine for Dx diet.

Have you ever tried rice milk angie? Its lower in potassium, and cant see why it would be high in phosphate.

LOL thats why I like it, its not as milky as normal milk. I used to water down a glass of milk anyway, so I guess thats why I like it.
