I took my coworkers to lunch a few days late to celebrate my transplant anniversary.  We had Thai food and for me it was a chicken satay appetizer followed by yellow curry with beef, salad, and rice...yum.

Tonight for supper i had a salad which consisted of lettuce, boiled egg, apple, crunchy chinese noodles and some mayo along with a baked potatoe, oh and a diet root beer, i know it sounds yucky but it is quite deliciosos if i should say so myself ;)  oh, and i sprinkled it with Red Devil Hot Sauce too :P

Went to a Spanish Tapas Bar last night. Tapas is a style of cuisine where you eat small portions of about 5 or 6 items on the menu.
We had
Garlic Prawns in sizzling garlic butter.
Andalusian Lamb Stew
Deep fried battered mixed vegetables
Silver Hake
Lamb's KIDNEYS!   (my way of getting even,....EAT THE B'''ARDS!!!!!!!)

All washed down with a delicious Californian Merlot.

All very yummy :thumbup;

for tonight delicious chicken chilaquiles... hmmmmmm


1 tablespoon olive oil
4 garlic cloves, chopped
1 (28 ounce) can whole peeled tomatoes in puree
2 canned chipotle chiles in adobo, finely chopped
1 tablespoon adobo sauce
Coarse salt
1 (1- 3/4) pound cooked rotisserie chicken, skinned and shredded, carcass discarded
1/2 cup lightly packed cilantro leaves, chopped
4 cups tortilla chips
4 sprigs cilantro, for garnish
1/4 cup reduced-fat sour cream
1 3/4 ounces feta cheese, crumbled

Combine oil and garlic in a large (3-to-4-quart) saucepan. Cook over medium heat, stirring occasionally, until fragrant and sizzling, 1 to 2 minutes.

Add tomatoes with their puree (breaking tomatoes up), chipotles and adobo, and 1 cup water. Bring to a boil; season with salt. Reduce heat and simmer rapidly until lightly thickened, 6 to 8 minutes.

Add chicken and cook, stirring, until hot, about 1 minute. Remove from heat; stir in chopped cilantro.

Divide chips among four shallow bowls; top with chicken mixture and sauce. Garnish with cilantro sprigs, sour cream, and feta. Serve.


Yield: 4 servings

at IHOP. 

We couldn't get into our IHOP on Monday, the place was standing room only.  We went over to Saugus Cafe for eggs, corned beef hash, biscuits and gravy, and home fries.

Went out for dinner tonight down at Melbourne's Waterfront City at the Docklands and had dinner at the Melbourne Yacht Club Hotel

I had Brodetto,an Italian Seafood Stew which was absolutely beautiful, will definitely go back to this place !

I'm dying to try their pumpkin pancakes, but we don't have an IHOP anywhere near us. The closest one is an hour away!   :(

Aren't those pancakes wonderful at IHOP? I'm going back! I don't know when, but I am going back for another helping of those cakes!!!  Everyone's menu sounded sooo good!!! I always start salivating when I read (and see the pictures!!!) of everyone's dinner plans!! Thanks everyone!!

I made apple salad the other day, just celery and apples and mayo (well, miracle whip, sorry, I LOVE that stuff!!), and that was it. It is so doggone good. I may make some more come to think of it.
