Crockpot Meatloaf.  This is my first attempt at cooking it this way, so wish me luck :2thumbsup;!  I'm also making some rice, a sald and corn on the cob.  It's a rainy, damp and dreary day here, perfect meatloaf kind of day.

I was afraid someone was going to ask that, lol, only cuz i would have to describe what is in it  ::)  it is a spanish soup that contains hominy, tripe (cow's stomach lining)  :o pig feet (no, not pickled) :P and/or chunks of beef.... It is delicioso and grrrreat for a hangover ;) ;)  :wine;

I know, i know, sounds gross, and probably isnt the best thing for me, but it is so good.  :thumbup;

Pho:  Beef noodle with bean sprout, basil, onions and chili peppers.

It sure fills and warms my stomach.

Plus a cup of lemonade.

I like me some pho!  But not spicy, has to be relatively mild.

Ummm, I don't think I'll be tasting Menudo any time soon.  I grew up with my mom cooking tripe for my dad and UGH the smell and the look.  He also used to eat the pigs feet and pigs knuckles.  None of my siblings ever ate this stuff, we were pretty much grossed out  :clap;

On another note, the crockpot meatloaf was pretty good.  Normally I like it crunchy, but this was a nice alternative.  Next time I think I'll cut down the time from 6 hrs to 5.
