Baked Potato (not exactly renal diet friendly)  :-\ , onions, cheese(OK or this, especially the amount Heph has)  :-\ , gammon(this also probably has too much salt)  :-\ , baked beans in tomato sauce and an orange. Don't think this one will be in the next renal cook book, but antibiotics make Heph weird and so I would rather he cheated on his diet than ate nothing at all.  ::) Well thats my excuse and I'm sticking to it!  :2thumbsup;

Holy cow that is like ALL things that my husband can only have in small planned for portions-that won't hurt him?  ALOT of potassium there.

Friday I had Godfather's Pizza... Taco PIzza and Pepperoni, and salad.

Saturday night, BBQ Ribs, Fried Potatoes, Corn and Salad.

Tonight- Chicken breasts seasoned, green beans, chicken flavored rice a roni, and salad.

Did I mention I *LOVE* salad??? :)

Tonight we had company over to watch Wrestlemania (love that Steve Austin baby, yeah)  I made beef and cheese enchiladas, spanish rice, refried beans and macaroni salad, my friend made pico de gallo salsa and i was so full from that i hardly ate any food, lol, but i got some for breakfast ;)   OH, and for dessert i had a drumstick ice cream, damn, its so good being so bad, i know i know :P  ;)

i had Asian seasoned chicken lettuce wraps with carrots, almonds, rice noodles and a wonderful peanut spicy sauce, chicken quesadillas and bean n cheese nachos with jalapenos...and to wash it down i had mango iced tea....hmmm the best meal.

How does Bison taste?

Similar to beef,  however the it cannot be cooked until its done, it is best to be eaten rare.

Chili tonight - been craving it like crazy since reading George's recipe on here.  I know it's not a great choice, but at least it will be homemade so I know what's in it.  I just won't have a second helping. . . promise!

Venison steak marinated in lime juice, garlic and cumin and grilled on the good ole charcoal grill - topped with fresh tomatillo salsa; grilled zucchini, yellow squash and red peppers; and couscous. For dessert - fresh fruit parfait made with strawberries, mango, bananas and vanilla yogurt. Yummy.
