What's for supper?

Fried dill pickles slices are on the menu at several restaurants around here. They are dipped in batter and deep fried. They are served with a dill based dipping sauce.

when I make them at home I use sliced hamburger dill pickles
drain on paper towels
batter
and deep fry
drain again on paper towel
we eat with ranch or buttermilk dressing
I think Texans will fry anything

keith...try pickles you will like them....cucumbers that are processed in vinegar etc.....not just raw cucumbers but those are very good too.

Sure....

Cut the corn kernels from about 3 cobs of corn.  Transfer half of them to a blender.  Add 1 large egg and 1/4 cup milk.   Puree until smooth. 

In a large skillet, heat 1 tbsp of oil.  Add chopped mushrooms (I used shitake without the stems, about 2 ounces) and 1/4 cup chopped sweet onion.  Cook over high heat, stirring occasionally until lightly browned, about 5 minutes.  Add the remaining corn and cook, stirring, for about 1 minute.  Scrape mixture onto a plate and place in the freezer just until no longer hot (just a couple of minutes). 

Meanwhile, in a bowl, whisk 3/4 cup flour, 1tsp baking powder, 1 tsp salt, and 1/2 tsp ground pepper.  Stire in the puree, then fold in the cooled-off corn kernels, mushrooms, and onion. 

Back in the skillet, add oil or spray with non-stick coating.  When the skillet is hot,  add a few mounds of the batter and spread them to 1/2 inch thickness.  Fry over moderately high heat, turning once until the fritters are golden and crusty, about 4 minutes.  Drain on paper towels.  Repeat until all batter is cooked.  Serve warm.

My family loved these.   They aren't big fans of mushrooms, but I kept them in, and everyone loved it.  They added a good flavor.

fried pickles, there is a restaurant here in denver that serves them. when a friend first told me about them i thought YUCK! but they are actually pretty good.

Maybe they will have that in Vegas to try. They're suppose to have a foot long hot dog I think that was either on the Food Network or History Channel on the history of hot dogs or places to try.

I have made Mexican rice and Guisado de Res - a mexican stew with beef, carrots, potato, bulb onions, and squash. I added one little chipotle chile with some of the adobo sauce they come in. I hope it is good!

As little deep-fried food as  humanly possible is one of my "rules" for health.  Not that I don't like the taste, I do, but I don't like the side-effects.  Bad for the cholesterol, bad for the waistline, bad for the heartburn so sorry tastebuds....get a grip.

At the Comedy club with Aharris2, I had 2 Amstel light Beers a couple slices of a mini pizza and then we stopped at a restaurant called O'Brien's. I had a Sausage sandwich with fries, some decaf coffee and a slice of Tiramisu(sp?)

Last Night we all had dinner from Red Lobster! We took it home. I had the Crab Linguini , mom had the Bourbon Georgia Peach Scallops and Shrimp, my dad had the Fire Grilled Lobster and Shrimp! It was reallly good. Tonight we are hopefully going out to dinner at a local place we usually go to Saturday Nights.

ugh, I have NO idea what to make tonight, so I thought I'd check here for ideas...I guess I'm just not in the mood to eat, because nothing looks good. Thanks for the ideas, though!

I had to chime in on the fried pickles conversation. I live in Georgia, and of course, everything here is fried. My native Georgian husband finally convinced me to try some fried pickles not too long ago - I think they were dills. I couldn't eat a whole lot of them, but just a few to snack on while waiting for a meal aren't bad.

Mini burger in mini white bun, grilled eggplant, grilled mushrooms and red peppers, red cabbage slaw with lemon vinaigrette, edamame salad (fresh soy beans with radish and onions) tabbouleh salad.  Watermelon and blueberries for dessert.

T-bone on the grill, home grown yukon gold potatoes, strawberry/mandarin salad with poppyseed dressing, and whopper topped brownies and ice cream for dessert.  Yummmmmmmmmmm!

My dad made chicken tortilla soup with avocado and queso fresco (crumbly mexican cheese) to top it off. We also had rice with the left over guisado de res,  calabacitas rellenos (stuffed squash), refried beans, and to balance it all out we had to have American apple pie --store bought since I do not do deserts-- my dad's favorite.
