we had chinese take-out -- and I just realized that it was the first time since the nephrectomies/dialysis/transplant

chicken and broccoli
homemade bean curd with veggies
wonton soup
steamed dumplings

My fortune said "the road to success is lonely"

fish! i'm eating alone tonite, april doesn't even like me cooking it when she's home, so i eat it when she's not around. i'd be very happy to exist on fish and chicken.

Here you go Twirl,  this is some seared tuna (finest quality sushi grade Ahi) with veggies and a saffron sauce.  I had it back when the kids were visiting and we all liked it.  I think there were little bits of lobster in the sauce too.

well the plate looked really nice till you said it was tuna. Sorry, but seafood just makes me want to  :puke; even by the smell of it.

I had easy to fix beer brats. Getting sick of these though. 2 a day and some munster cheese for calcium. I need a appetite and a better diet! No idea why I couldn't eat this way when on dialysis.

Eye impairments and blindness in one eye began in 95, major one during visit to the Indy 500 race of that year
   -glaucoma and surgery for that
     -cataract surgery twice on same eye (2000 - 2002). another one growing in good eye
     - vitrectomy in good eye post tx November 2003, totally blind for 4 months due to complications with meds and infection

Diagnosed with ESRD June 29, 1999
1st Dialysis - July 4, 1999
Last Dialysis - December 2, 2000

I sometimes fix tuna patties, basically the same recipe as salmon patties. Not bad when you're poor and hungry.

Hey, we love salmon patties.  I make them with canned salmon.  I add celery and onion that I saute after chopping finely and an egg to make it stick together.  If I add a little mayo I can bake them in the oven instead of doing them on the stove.  This is the basis for one of my relatively healthy and relatively easy "pantry" meals.

But, I sure do love seared tuna, especially with wasabi mayo.

This is putting me in the mood for sushi.  Stephen can't eat anything raw anymore, but he can still have tempura and veggie rolls, I guess.

Willieandwinnie... I would love your recipe for crab cakes and peppermint patties!!!   :bow;

Tonight we had chicken tenders, mac and cheese, mashed potatoes and green beans.  So delicious!

donnia, I'll post the recipes in the recipe post when I get a minute. The peppermint paddies are wonderful.

last night I fixed fried catfish, spinach noodles with sauce and asparagus. Yummmmmmmm

Potato Patch
they throw food to you - rolls, muffins, fried green toms and fried okra
I had 6 fried shrimp and 6 grilled shrimp, tea, salad and baked potato
I had 9 shrimp left to take home
(I ate 2 and gave my huband 1)
and I dropped them
my pets are eating good tonight

Tonight I made an eggbeaters omelet with about a teaspoon of ham, some green onions and cream cheese in the middle.  A little bit of hot sauce for flavour and then I cut it in half and stuffed each half in a half a toasted pita.
It was really delicious, either that or I'm so hungry anything would be amazing.
