Today i made my famous Toastadas for Kit and her hubby.   After a mad rush to the store for a chicken that is :P  (sorry Kit) lol,   on the toastada there was beans, spanish rice, rotissieree chicken, lettuce, tomatoe, cheese, sour cream and olives.    Hope you and Victor liked them Kit,  i enjoyed the company more myself ;) ;) ;) ;)

Do you make the spanish rice? If so can we please have the recipe! Thanks!

For dinner, we are going to have steak sandwiches at Kozmo's in Stockton,  we are going to visit family there and they have the best sandwiches.

Panda_9, spanish rice is very easy,  you use 1 cup of rice and 2 cups of water and one can of tomatoe sauce,  first you can brown some onions in a little bit of oil, throw in the rice and brown that,   when rice is a light brown, throw in 1 can of tomatoe sauce and the two cups of water, add spices (salt, pepper, garlic powder) bring to boil, cover and reduce heat, usually takes about 15 minutes to finish cooking.  Hope it comes out for you...

(if you need to make more, just double everything) ;)  Good Luck... :2thumbsup;

Tonight for dinner we are having spaghetti w/garlic bread ;)

(Panda_9  the tomatoe sauce in the can, i believe it is an 8 oz. can) :thumbup;

edited:  Hubby forgot the garlic bread so we are eating toast bread :P  second best thing i guess  :2thumbsup;

goofinya, I think the tomato sauce here would be referred to as puree, as we call tomato ketchup tomato sauce!

burritos tonight.  every 2 weeks this mexican lady comes to our unit and sells homemade mexican food.  today i bought 1 doz burritos.  i was dissapointed becuz she didnt have tamales.  she usually does...next time.

i know they are not renal friendly.  i sampled one already....bean burritos with potato chunks in them and i dont know what else. boy 'o boy they were spicy.  so good thou. :popcorn;

Tonight i am hosting a mini-dinner party for a friend and her mom and sisters, we are going to have Tacquitos w/guacamole, rice, beans  and i will be making some jalapeno poppers and deviled eggs for appetizers.  Keeping it simple ;)

Goofynina, What is a Tacquito?  I've heard of tacos and tamales, but never a tacquito.  But I'm sure I'd like it!  :clap;

It is either chicken or beef rolled in a corn tortilla and then deep fried,  not the healthiest but it sure is damn good :P
