Everybody around here eats fish on Fridays so I think I'll grill tilapia and scallops with green beans and fresh tomato slices.

Eye impairments and blindness in one eye began in 95, major one during visit to the Indy 500 race of that year
   -glaucoma and surgery for that
     -cataract surgery twice on same eye (2000 - 2002). another one growing in good eye
     - vitrectomy in good eye post tx November 2003, totally blind for 4 months due to complications with meds and infection

Diagnosed with ESRD June 29, 1999
1st Dialysis - July 4, 1999
Last Dialysis - December 2, 2000

Kidney and Pancreas Transplant - December 3, 2000

Cataract Surgery on good eye - June 24, 2009
Knee Surgery 2010
2011/2012 in process of getting a guide dog
Guide Dog Training begins July 2, 2012 in NY
Guide Dog by end of July 2012
Next eye surgery late 2012 or 2013 if I feel like it
Home with Guide dog - July 27, 2012

I went out after work with some friends and had 6 olives with a couple of martinis. 

Then I came home and had Pa Ward's grilled chicken and veggies from the garden.  I don't know if I've shared this chix recipe before.  It came from a good friend.  It is super easy, and super good.

Pa Ward's Chicken:

Marinate chicken in 1 c. apple cider vinegar, 1/3 c. Texas Pete, juice of a lemon.  We use thighs or drumsticks and marinate overnight or all day.  Grill slowly over low heat.  Add hickory chips to the grill if you have them.  Will take about 45-60 minutes.  You can buy chix thighs on sale, freeze them in the marinade, defrost and then grill.

Oh no! The shark postcard is on the loose chomping on people. I will have to try sending another shark.

Mew mew is banned from our bedroom at night. I don't think she ever sleeps! She enjoys racing across our heads at night and dive bombing the dogs. Sooo, it's off to her crate at night.

And I am having macaroni and cheese for dinner. Kraft of course.

barbequed chicken....I just take a whole chicken, season it and wrap it in foil with a bottle of bbq sauce. Just toss it on the grill for about an hour.

Last night I went to the casino buffet. I had lots of sirloin steak, broccoli, carrots and some roasted potatoes. Yum.

08/09 AV Fistula redone higher up on arm, first one did not work
07/11 Mass found on remaining kidney
08/11 Radical Nephrectomy, confirmed that mass was renal cell carcinoma
12/12 Whipple, mass on pancreas confirmed as renal cell carcinoma

I am having a pizza delivered here tonight, going to watch the closing ceremonies of the olympics. I ordered a medium pepperoni and mushroom. Wish they had a small but they dont.

I like this idea, sounds easy.  What kind of bbq sauce do you use?  Does it really cook in an hour?

Tonight we had grilled buffalo burgers (from Trader Joe's), summer squash sauteed with onions and garlic, and salad.

We're having Belgian waffles with strawberries and Cool Whip (my hubby is watching his cholesterol) for dessert.  I made this for dessert before Will left for college and had leftover waffles that I froze.  We have to do something to cheer ourselves up!

My sister and I went to a Vietnamese restaurant and had skinny rice vermicelli with pork and shrimp spring rolls (lots of onions, sprouts, not too much meat) and lots of fresh mint and cilantro, hot sauce.
Watermelon for dessert.

It takes about an hour on medium heat with lid closed. I usually turn it every now and then. I rub the chicken with olive oil and season it. (I use Mrs. Dash Chipolte blend). My favorite sauce is a 50-50 mix of Coke and low sodium ketchup. If you want to feel safe, use a meat thermometer (165-175 is done). If you want more flavor, stick a half can of beer in the cavity.

Twirl, I keep forgetting to take pictures of the food we're eating.  I'll try to remember to take pics of our lunch today.  I was at my cousin's wedding on Saturday, to a girl of Korean background and we had an amazing Korean feast but again I forgot to take photos.  However, here are some shots from the wedding.  The pots of flowers behind the bride and groom are from my garden, about 6 of my big pots went to the wedding.  The baby is one of my other cousins' latest, and then there's me and my sis.

Thanks for the details on the chicken Flip.  I'm not totally sold on the coke idea, but I am going to try it that way at least once 'cause it's your recipe.  maybe this weekend...

I use frozen peas and carrots (crinkle cut) and put them in foil with some chopped onion, garlic powder, butter and a little sugar. I just wrap them up and toss them on the grill for about 45 minutes.
