Absolutely Clueless

In the past, I have been gently admonished by some IHD members; I have been told that since CKD is MY problem, then the diet is also MY problem and that I shouldn't expect my restrictions to affect others.  OK, fine.   So, tell me what you think about THIS story...

We live close to a Fresh Market, and my husband loves their stuffed poblanos.  They are stuffed with ground beef and have no cheese or anything that I can see would be a problem, but since I didn't make them myself, I don't know how renally friendly they are.  So, I just limit my portion and take my binders.

My husband decided tonight to recreate this delicacy, and any time he does the cooking, I am grateful.  He's been aware of my diet for the entire 7 years I've been faffing around with this, so it's not like he should be Absolutely Clueless.  Or, so I thought.

Instead of using relatively safe ground beef, he decided to use...wait for it...are you sitting down...a mixture of (gulp) Mexican chorizo and hot Italian sausage.  He didn't want to mess about with seasoning any meat, so he chose the two most intensely seasoned meats he could think of and smushed them together.  Now I ask you...how renally friendly do you think THAT is?  To top it off (literally), he sprinkled pepper jack cheese on top.

Mexican chorizo, hot Italian sausage AND pepper jack cheese.

Goodness, I sure wouldn't want my dietary restrictions to affect him in any way, now would I?

I was quite speechless, and it wasn't just because my occasional aphasia was kicking in.

That's my weird tale of the day.  It's up there with the coyote pee story.

Wowsie!!! I dont know myself if that is out of bounds on the DIET, but it would be out of bounds for the heartburn diet, boy, talk about a triple whammy!!!

I'm thinking he just didn't want to share !!   if he'd prepared half without any cheese on it for you, I would've said he's only half clueless.  HA.   (sounds yummy though)

I was told by my dietician that any "seasoned meat" of any kind bought from the grocery store is not good for the kidneys. 

From my understanding, pork is also higher in phosphate than beef too, (I think, but don't quote me on this one)

It's good you took your binders, less worry then   and really, once in a while, can't hurt you

oh lordy.... how very precious of him...      I'm tellin ya, i AM impressed with his 'skills' and i betcha it was delicious!!!  But the kindness or thoughtfullness?  of it all sort of goes out the window with those ingredients..  wowzer

I guess I left out one vital piece of information...

He knows I don't like chorizo or Italian sausage, but they are amongst his favorite things, so no, this item will most assuredly not be a repeat for me.  He can have it if he wants it, but I'm not eating it.  I ate it just to be polite.  And he knew that it was something I couldn't eat, but he didn't care because it was something HE wanted.

FYI I just looked up ground pork and it's very close in potassium and phosphorous to ground beef and both are lower then chicken.  So I'd say ground pork is fine.

The meats used for that dish are full of nitrates and nitrites I'm sure and that isn't good for anyone, healthy kidneys or not.

Ever read the first ingredients of Chorizo?  I think it's pork snout

Niman Ranch does pork that has no nitrates, nitrites nor phosphates.  If I am going to eat bacon or sausages, that's what I use.  And it is true that those preservatives aren't good for anyone.

I don't know how many of you are familiar with hot Italian sausage and Mexican chorizo...those are not two things I would have thought to combine.   It'd be like making pepperoni tacos or something...

would he be willing to make the meat ones for himself and make vegetarian ones for you? i too do not like italian sausage or chorizo but stuffing made of rice and vegies sounds really good to me.

Oh, I'm sure he'd be willing to give it a go, thegrammalady, but vegetables are not his strong suit.  LOL! 

I'm just still gobsmacked at the idea of combining Italian sausage and Mexican chorizo.

I have my local butcher make me chicken sausages, beef sausages etc, that doesn't contain any preservatives and no salt.

Maybe look into that, so if he wants to use sausage for anything you know it's safe.

MM, my initial thought on this is that in his role as spouse/caregiver and the stresses he is under from that point of view (wow, that sounds like I'm saying it's stressful to be your partner - I don't mean it that way!!).. anyway maybe doing something like this, as in his treat, is a coping mechinism. Sure, on the surface it seems pretty insulting: I'll do the cooking for a change, but make something that's full of stuff that is a concern diet wise, and stuff you don't even like! MINE! Doesn't seem too supportive right? My gut thought given I don't know him from a bar of italian sausage, is that it's just one way of finding something for him.

My other thought is, before I read that you hate that stuff, was that let's say he made it with ingredients that appeal to you, but worry you with the diet side, is to just have a little bit and perhaps suppliment with more bland/acceptable stuff to make up a more full/balanced meal for you.
