Some nurses ,dietitians, neurologist  at St. Micheal's Hospital in Toronto, Ontario Canada, decided for 5 days to follow the renal diet to under stand their patients.

After reading the blog post I don't think they get it.  They focus and complain about what we can't eat, instead of planning meals around what we can.  Maybe I've just been following the diet for too long, and I enjoy my low potassium veggies.

Rain, you are exactly right.  They don't get it because they instead of focusing on safe foods that will nourish you, they focus on the foods that will harm you.  No one wants to keep hearing what they CAN'T eat, rather, they need to know what they CAN eat and how to get the most nourishment out of a limited number of choices.  I believe that undernutrition is a real problem for patients because many figure it's easier not to eat at all instead of spending so much time avoiding so many foods.

I believe that renal nutritionists should sit down with patients and get a list of which foods are the most loved and the hardest to avoid.  Take that list, and develop a renal diet around it.  If a person's fave food is pizza, suggest making one's own and include a recipe for renal friendly pizza.  Encourage patients to do as you do, Rain...be creative and adapt taboo foods.  Be POSITIVE in your approach, not so negative.
