Yes I eat Deviled eggs all the time.

Add a bit of mayo the yoke , with some spices perfect.

@Gothiclovemonkey, please share the pickled eggplant recipe.  I just love eggplant and bought some eggplant yesterday in the hopes that you would share your recipe with us!

I use Grapeseed Vegenaise instead of Mayo.  I really like the taste

i unfortunately dont have any set recipe, i do mine to taste, but ill give the basics, and u can experiment :)
I peeal the eggplant, all the skin off, then slice it up, i pore quite a bit of olive oil over it, enough to soak into the eggplant, (eggplant it like a sponge, so it takes alot) lots and lots of garlic, i like minced and granulated, and i mean ALOT, i let that cook for a while, slowly adding vinegar to taste... i end up with (im guessing here) probably at least a good 2 cups of vinegar or more... and i cook it on low for a long time, it ends up looking absolutely disgusting, almost like snot? but its soooo good! ill try to post a pic of the finished product for u. its really easy, but i go by my own personal taste, never had an actual recipe, my gma made it, and i never had a chance to get the recipe, so i did it by memory....

I'm sure that would be delicious glm.  The only thing is that lots of olive oil = lots of calories and eggplant does really soak it up.  What I do to get around this (and add extra flavour to the eggplant) is brush it with olive oil, and then barbeque it till softened and a touch charred then proceed.  Some eggplants can be bitter, especially the larger ones, although if you sprinkle with salt and then dry off thoroughly after 20 minutes or so this will pull out the bitterness.  The long thin "japanese" or "chinese" eggplants are paler in colour the the usual ones but aren't at all bitter.  I often just grill them, sliced in half and rubbed with olive oil and lots of garlic...best of all, keep some olive oil with garlic grated in it and use that for all sorts of things to add flavour to the blah renal diet.

i like the bitterness myself :) and i dispise the flavor of salt on most things, so i almost always avoid it like the plague lol
yes that probably is high in calories! but i only eat about 2 table spoons of it, as a snack, its too rich to eat alot!
that does sound good, the grilled flavor,  it would be more like a burger then? unless i suppose i pureed it?

They get soft on the grill and are easily mushed up.  Salting the raw eggplant and then rinsing and wiping after doesn't add salty taste ...there will be liquid on the eggplant as the salt pulls out the bitter and then it's gone...has to be dried off tho or it would be salty and not good at all.  If you like the bitter then obviously you wouldn't do this step.

You all got me interested in eggplant now.  It's not something I ever think about buying. 

Looking up the nutritional info on it it is:

Peeled Eggplant

3/4 pound, 229g

Potassium 527mg

Phosphorous 57mg

Calories 55

Not bad at all... I think I'll give it a try next time I go to the store
