I find myself eating egg whites, in omelets and from hard-boiled eggs, everyday. Does anyone know any good recipes that are renal diet friendly for egg white omelets?

I had a more serious thought at midnight last night. I understand that the Pritkin (? sp) diet had a lot of recipes which used eggs whites. It might be woth a google.

there are tons on line if you Google them. Using egg whites has less phosphorous which you are probably aware already. A peach omelette is always good. Drain the juice from canned peaches. A little cinnamon and a teenie-tiny dash of allspice. A little non-dairy creamer helps "fill" the omelette I believe. Here is another which sounds pretty good if you ask me : http://www.kidneysdothat.org/kidney-recipes/egg-white-omelet-with-asparagus-and-goat-cheese/

What's up with the "Peach" thing tonight LM? lol You probably know you add a little extra egg white to something if you need to build up more protein. The phoso is mostly in the yolk. And the protein in the white. As always check with Dr./dietitian on this.

Peaches sounds really good. I'll give it a try. I did a food analysis of egg whites on Davita, and it said zero phosphorous.

My wife made me an egg white omelet with peaches and cream cheese. It was fantastic.

White is protein and yellow is cholesterol and phosphorus. Eating eggs boosts the protein and if you ate an omelet and ate four eggs, discard two or three of the yellows, you should be fine, but always check with your own dietician first.
Try egg white salad. Boil eggs, peel and slice, discarding yellows and mash up with some lite mayo. Makes a good egg salad and no phosphorus or cholesterol. Mayo is egg whites as well.
