Ingredients
* 3 pounds ground beef
* 2 large eggs, beaten
* 1/2 cup skim milk or nondairy milk substitute
* 1 cup dry oatmeal flakes (Quaker® Quick Oats)
* 1/2 cup onions, diced
* 1 tablespoon dried thyme
* 1 teaspoon dried oregano
* 1/2 teaspoon pepper
* 1 cup barbecue sauce (look for the lowest sodium brand or make your own)
Preparation
1. Preheat oven to 375° F.
2. Combine all ingredients, except barbecue sauce and water, in a large bowl and mix together.
3. Roll into 1” balls and place on a baking sheet.
4. Bake for 10 to 15 minutes, until meatballs are cooked through.
5. Combine barbecue sauce and water in a warming dish or crock pot on low temperature setting. Add meatballs and stir. Cover until ready to serve.

* 1 tablespoon mustard
* 1/4 teaspoon ground black pepper

Preparation
1. Boil eggs for 15 to 20 minutes.
2. Let eggs cool for approximately 1 hour.
3. Slice eggs in half, lengthwise and scoop out the yolks.
4. Combine the yolks, mayonnaise, mustard and pepper; mix well.
5. Stuff yolk mixture into egg white halves and sprinkle with paprika.

Ingredients
* 3 pounds ground beef
* 4 large eggs
* 7 tablespoons cornstarch (divided use)
* 4 tablespoons onion, grated
* 1/4 teaspoon ground black pepper
* 1/2 teaspoon nutmeg
* 1/2 teaspoon garlic powder
* 2 tablespoons reduced-sodium soy sauce
* 1/3 cup vinegar
* 2/3 cup water
* 1/2 cup brown sugar, unpacked
* 1/2 cup white sugar
* 2 cups pineapple juice
* two 20-ounce cans pineapple chunks, drain and reserve juice
* 2 cups sweet bell peppers (red and green), diced
Preparation
1. Preheat oven to 375° F.
2. Combine ground beef, eggs, 1 tablespoon cornstarch, onion, black pepper, nutmeg and garlic powder. Mix well.
3. Form into 1” balls and place on a baking sheet.
4. Bake for 10 to 15 minutes, until meatballs are cooked through.
5. Drain juice from pineapple cans into a measuring cup. Add water to make 2 cups. Reserve pineapple chunks.
6. Combine remaining 6 tablespoons cornstarch, reduced sodium soy sauce, vinegar, water, brown and white sugars and pineapple juice. Heat until thickened, stirring constantly. Remove from heat.
7. Place meatballs, sauce, pineapple chunks, green and red peppers in a covered warming dish or crock pot set on low setting until ready to serve.

* 1/2 teaspoon minced garlic

* 1/4 teaspoon red pepper chili flakes (if spicy desired)
Preparation
1. Drain red peppers and measure 1/2 cup, (approximately 2 whole peppers).
2. Place peppers and garlic in food processor or blender. Process until smooth.
3. Add tomato sauce, olive oil and Italian seasonings. Process until well blended.

Ingredients
* 2 cups warm water
* 2 packages dry active yeast
* 4 tablespoons canola oil
* 5-1/2 cups flour (divided)
* 6 cups water
* 3 tablespoons baking soda
* 1/4 cup mustard
Preparation
1. Dissolve yeast in warm water and let stand for 10 minutes.
2. Add canola oil and half of the flour. Stir until thoroughly mixed. Add remaining flour and knead for 5 minutes.
3. Let dough rest for 1 hour.
4. Divide dough into 24 pieces. Roll into 18” lengths and twist into pretzel shape. Let rise for 30 minutes
5. Preheat oven to 475° F.
6. Add baking soda to 6 cups of water in a large pot and bring to a boil.
7. Add pretzels to boiling water for 1 minute then transfer to a baking sheet sprayed with nonstick cooking spray.
8. Bake for 12 minutes.
9. Serve each pretzel with 1/2 teaspoon mustard.

Ingredients
* 3 pounds boneless, skinless turkey breasts
* 6 tablespoons reduced-sodium teriyaki sauce
* 1-1/2 teaspoons sugar or sugar substitute
* 3 teaspoons canola oil
* 1 teaspoon ground ginger
* 1/2 teaspoon nutmeg
* 2 large onions, kabob-sized pieces
* 3 sweet bell peppers (red and green) kabob-sized pieces
* two 20-ounce cans pineapple chunks, drained
* 1 cup Girard’s® raspberry salad dressing
* 1/2 pound grapes (purple, red, green)
* one 8-ounce can mandarin oranges, drained
* 24 skewers or kabob sticks
Preparation
1. Cook turkey breasts at 350° F for 1 hour or until meat thermometer reaches 180° F. Let cool.
2. Cut turkey into bite size cubes.
3. In a large bowl, combine reduced-sodium teriyaki sauce, sugar, oil, ginger and nutmeg.
4. Place turkey cubes in mixture. Cover and let sit in refrigerate for 30 minutes.
5. Using skewers, alternate turkey, onion, peppers, and pineapple chunks to make 24 kabobs.
6. Place kabobs in a large microwave safe dish and cover with wax paper. Microwave kabobs for 8 minutes.
7. Place kabobs on a serving platter. Pour dressing over kabobs and garnish with grapes and mandarin oranges before serving.
