Lemon Meringue Nests

10 frozen puff pastry shells
1 box lemon pie filling mix
3/4 cup sugar
2 large eggs, separated, yolks into a cup, whites into a medium bowl

bake pastry as package directs
prepare lemon pie filling as box directs using 1/2 cup of sugar, 2 1/4 cups water and the 2 egg yolks
remove pastry top and soft pastry from hot shells as package directs - fill each shell with 1/4 cup hot lemon filling
prepare meringue as pie filling directs using 1/4 cup sugar and the 2 egg whites - evenly spoon meringue on hot filling and spread to edges
of pastry to seal
turn oven to 350
bake 10 t0 12 minutes until meringue is browned
cool and refrigerate
bring to room temperature before serving

can - stir freshly grated lemon zest into the hot pie filling
monrein --- use five six ounce ramekins or custard cups for pastry shells
