Found the following on a site:

Seitan - Traditional (box)
Water, Wheat Gluten, Soy Sauce (Water, Soybeans, Wheat, Salt), Garbanzo Bean Flour, Soy Flour, Ginger Oil, Aquaresin Garlic.

I would want to know how much sodium the soy sauce contributes and how much phosphorus the garbanzo bean flour contributes.  The site also says it is high in protein (but they don't cite numbers) and low in fat.

Found this on another site:

As a protein source, seitan contains about 31 grams of protein per 4 ounce serving (which means it has more plant protein per serving than tofu), provides a modest amount of B vitamins and iron and contains no saturated fat or cholesterol. A 3 1/2 ounce (100 gram) serving contains 118 calories, 18% protein and less than 1% unsaturated fat. The same amount of beef has 207 calories and 32.2% protein and is high in saturated fats.

The sodium and the phosphorus would be my concerns also.

Self-cannulated, 15 gauge blunts, buttonholes.
Living donor transplant (sister-in law Kathy) Feb. 2009
First failed kidney transplant removed Apr.  2009
Second trx doing great so far...all lab values in normal ranges

From the CalorieKing site - high in protein and low in fat, but high in sodium (380 mg in 3 oz.).  It's made from garbanzo bean flour and soy flour, both of which are relatively high in phosphorus.

Stick with real food and reputable companies for protein supplements.
If it sounds too good to be true, it may be injurious to our health.

Seitan is a vegan staple and is delicious if prepared the right way.  I actually like it better than tofu because it has a little more texture.  But, probably not the best choice on the renal diet.

That's what I wanted to know. If it could be used as a protein source. It could, but at the expense of other considerations!  Thanks everyone, for your knowledge, it helped!!
