Eggplant is low in K and phosporus.  I was watching a show on FOODTV this morning and they mentioned an Italian festival where they had eggplant made into french fries.  I looked around on the net and found a recipe.
I'm going to try this this week--it looks pretty good and it's something different to try.

Eggplant french fries
Categories: None 
Yield: 1 servings
1 large Eggplant; peeled and cut into french fries
1  Egg
½ cup Cracker crumbs; bread crumbs, or matzo
½ cup Flour
  Salt and pepper to taste
  Oil

My dad makes this all the time. It is a good way to get the kids to eat it. Beat egg well. Mix flour, salt and pepper. Dredge "fries" in flour, then dip in egg, then roll in crumbs. Set on waxed paper and refrigerate for at least 15 minutes to "set" coating. Heat oil in heavy fry pan until very hot. Fry the eggplant slices golden brown. Serve hot as they will "wilt".


Eggplant French-Fries

1 medium eggplant
flour
salt
pepper
garlic salt
one half cup vegetable oil

Peel the eggplant, and then slice it up like you were making french-fried potatoes. Once you get the eggplant cut up, then you want to take a large plastic baggie, and fill it with mixture of flour, salt, garlic salt, and pepper. Then just place the eggplant into the baggie and shake it up. After you've powdered your eggplant, it's time to begin frying. For a medium sized eggplant, you'll want to heat up half a cup of vegetable oil on medium high heat. This helps to keep the fries from absorbing too much oil. When the fries turn golden brown, remove them and place them on a paper towel to drain. You can serve the fried eggplant as is, or pop it in the oven to keep it warm (this also makes it crispier).

let us know how this tastes-

I still make fries-but I leech them for 6 to 8 hours first-and I change the water every hour.

for homefries I also boil until 1/2 done-poor water off-new water-finish boiling-then fry.its alot of work,but he appreciates it.

I get some lovely eggplants every Friday/Saturday.  Thanks for another way to have them.  I usually do them something like that, but in round slices, not in french fries (and I should; I am a french teacher!)

hey bajanne, good to read you again...may i ask a personal question?

how many languages do you speak?  so far i know of three...English, Spanish n French. any dialects?
