Mom and Dad taught me to make 'Freezer Jam' Take a quantity of soft fruit such as strawberrys, apricots, peaches, or berries, if cots or peaches you got to peel them, dunk for a few seconds in BOILING water and the skins will slip right off.
Place fruit in a decent size pan on medium heat, smash with the bent wire type potatoe smasher and heat while adding at least an equal weight of sugar, or more.
Add pectin or lemon juice to keep the color from changing
Make sure all sugar is dissolved.
Spoon into freezer safe containers with lids.
Freeze.
If you have enough sugar in the fruit it will NOT freeze solid. It will instead freeze the water into crystals but still stay spreadable with a butter knife.
Any of the three fruits make excellent jam to use on toast, bread, muffins, whatever you prefer.
Mouth watering.
I haven't tried other soft fruits like plums, or persimmons. Though we do hae a number of persimmon trees out back, I have yet to get into them. They ripen and fall on the ground and I smoosh them with the lawn mower tires. Yeah, another "D'oh" Moment huh.
