My clinic is having a picnic this sunday, and I cant figure out what to make!!!!! It, of course, must be renal friendly. I figure most people will probably think of the normal picnic fair, like deviled eggs and such. So I want to make sure I bring something that wouldnt be thought of by others.... is renal friendly...and yummy for a picnic.
(even though it cracks me up we are having fried chicken....... salty much?)

any ideas???
Im looking through old posts now, hoping to find something, but i figure id post and see what you all come up with!!!

WELL I actually think I found a few things I am going to do, but if you guys want to let me know of other options I would be very happy to hear them, my son loves picnics, so the more the merrier! :)

I have narrowed down I am making apple salad, dyed deviled eggs, and i miiiiight make pickled eggplant but idk because its an aquired taste i think lol

This recipee is awesome. My dietician gave it to me and others on dialysis when I went to a cooking demo at my hospital for renal patients, in June. It's a cool and delicious salad and renal friendly!  Let me know if you'd like a desert too, I have a yummy, easy idea for a desert too that's also renal friendly!

Cucumber Salad (Serves 10)

3 English cucumbers peeled or striped
1 red onion
1/2 Cup Rice Vinegar
1/2 Cup Water
1/3 Cup Sugar
2 TBSP white sesame seeds, toasted for garnish

1. Slice cucumber thinly into rounds and finely dice red onion, place into a bowl.

2. Stir together rice vinegar, water and sugar and pour over cucumber and onion

3. Cover and marinate for an hour

4. Plate and garnish with sesame seeds.

If you have diabetes,: 1 1/2 servings = 1 carb choice

OR try substituting Splenda for some or all of the sugar


Nutrient Analysis: Per serving (1/10 of the recipee) 1 svg= 1 veg choice

Calories: 51 kcal

Protein: 1 g

Carbohydrates: 11 g

Fibre: 1 g

Total Fat: 0 g

Sodium: 5 mg

Potassium: 130 mg

Phosphorus: 29 mg

Diagnosed with Polycystic Kidney Disease at age 19.
Renal Failure at age 38 (2010) came about 2 hrs close to dying. Central line put in an emergency.
Began dialysis on Aug 15, 2010.
