Here is a refreshing recipe that you could enjoy on a hot summer day. But remember to watch your fluid consumption.

1 large cucumber - peeled and seeded if it has seeds
1/4 cup sugar
1/4 cup water
1 tbsp fresh mint
Juice of 1/2 a lime


Create a simple syrup -  add sugar and water in a sauce pan and heat on low until sugar is melted.  Place aside and allow to cool.

Add cucumber, mint, simple syrup and lime juice to a food processor, blender or stick blender, and puree. 
Pour in Popsicle models and freeze.  Enjoy on a hot summer day.

This sounds like a refreshing treat thank you for posting in fact I am going to send receipe to my daughter for my grandson he is 3 almost 4 and something tells me he would lke this. :thx;
