Vegetarian Pizza
Diet types:
CKD non-dialysisDialysisDiabetes

Recipe created exclusively for DaVita.com by DaVita dietitian Sara, RD, CSR, CDE, from California.
Portions: Two 12" pizzas     Serving size: 1/4 pizza (8 servings)

Ingredients
1/2 cup red onion, diced
1/2 cup mushroom pieces
1/2 cup green bell pepper, chopped
1/2 cup pineapple chunks or tidbits
1/2 cup part skim mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese
1 cup Roasted Red Pepper Tomato Sauce (see below)
Easy Pizza Dough (see below)

Preparation
Prepare Easy Pizza Dough and Red Pepper Tomato Sauce recipes.
Preheat oven to 425º F.
Shape pizza dough to make two flat 12" pizza crusts.
Spread 1/2 cup Roasted Red Pepper Tomato Sauce over each pizza.
Top with red onion, mushrooms, bell pepper and pineapple.
Sprinkle mozzarella and Parmesan cheeses on top.
Bake at 425º F 12 to 16 minutes until bubbly and browned.

Renal and renal diabetic food choices

Helpful hints
Red pepper tomato sauce and pizza dough can be made in advance and refrigerated or frozen until the day pizza is prepared.
To form 12" pizza, turn a medium-sized bowl upside down and dust with flour. Gently stretch dough evenly over outside of the bowl; turn and place on pizza pan.

Easy Pizza Dough
Diet types:

Portions: 2 pizzas     Serving size: 1/4 pizza (8 servings)

Ingredients
1 cup water
1/4 cup canola oil
3 cups all purpose flour
1/4 teaspoon salt
1 package rapid rising yeast

Preparation
Preheat oven to 450º F.
Pour water into a measuring cup and heat in microwave to 120º to 130º F. Add canola oil and set aside.
Combine 2 cups flour, salt and yeast in a large bowl. Add warm water and oil and stir to form the dough. Stir in an additional 1/2-cup flour.
Place dough on a floured board. Sprinkle with flour and knead dough 5 to 6 minutes until smooth and elastic. Add more flour as needed to prevent sticking.  Divide in half and form 2 balls.
Cover dough and let rise for 10 minutes. Punch dough down and form each ball into a flat 12" pizza shape. Place on pizza pan or baking stone.
Spread sauce over each pizza, add pizza toppings and bake at 425º F for 12 to 16 minutes until bubbly and browned on top.

Helpful hints

Divide each dough ball in half to make four individual-sized pizzas.
Creative suggestions for Easy Pizza Dough
Make bread sticks by dividing dough into 16 pieces and roll into cigar-shaped pieces.  Bake at 425º F until golden brown.
Make rolls by dividing dough into 8 rolls.  Let rise until doubled in size, brush with oil and bake at 425º F until golden brown.
Make cinnamon rolls by rolling each dough ball into a rectangular shape.  Spread with softened butter, and sprinkle with 1 tablespoon cinnamon and 1/2-cup sugar or granulated sugar substitute.  Roll up and cut roll into 2" pieces.  Place cinnamon rolls in a buttered dish and bake at 400º F until golden brown.

Roasted Red Pepper Tomato Sauce

Portions: 4     Serving size: 1/4 cup

Ingredients
1/2 cup roasted red peppers (bottled, canned or fresh)
1/2 teaspoon minced garlic
1/2 cup tomato sauce, no salt added
2 tablespoons olive oil
1 teaspoon dried Italian seasonings
1/4 teaspoon red pepper chili flakes (if spicy desired)

Preparation
Drain red peppers and measure 1/2 cup, (approximately 2 whole peppers).
Place peppers and garlic in food processor or blender and process until smooth.
Add tomato sauce, olive oil and Italian seasonings.  Process until well blended.  Ready to use on pizza, pasta or as a replacement for tomato sauce in recipes.
May be refrigerated 2 to 3 days or frozen until ready to use.

Helpful hints
Compare roasted red peppers. Select the brand lowest in sodium or make from fresh peppers.
Fresh minced garlic may be replaced with bottled minced garlic.
Adjust red pepper chili flakes according to desire for hot and spicy flavor.
This lower potassium, low sodium sauce can be used as a substitute for tomato sauce in a variety of dishes. Try it on pizza, pasta, rice or as a topping for chicken.
