We had this Irish neighbor who used to make trifle so I was thinking it is a perfect dessert for a dialysis diet. 

You take some pound cake, put it in a clear glass bowl to make a bottom layer.  Then you put some non dairy whipped topping on it, then a layer of berries like blueberries, strawberries, raspberries, they're all renal friendly.
Then you can put some jam on that and then do the layers again a few times until you fill up the bowl.  You can do individual cups of it also.  My neighbor used to put some kind of liquor on the pound cake and let it soak.  Trifle is made with custard but the Cool Whip can be a substitute.  Maybe you can make vanilla pudding with that Dairy Delicious milk?  I guess you can do any variation you like with trifle, my mom made it with Jello pieces once.

Now that is a good idea. I miss my puddings. I take it that's liquid coffeemate, not the powered stuff?

coffeemate, good in coffee if you are so inclined. i use it on my cereal and when making french toast. super yummy. as i am also an asthmatic, didn't drink milk, so the only problem was cereal. i find the coffeemate more than acceptable. i usually use the french vanilla flavor, hadn't thought of pudding though.
