Zach's chili not only tastes good but acts as a sort of therapeutic experience for me. I like cooking it, I like eating it and I like the fact that my husband likes it, so it's rewarding for both of us. Makes for a little relaxation and offers something to be happy about. Must be the chili powder... And some nights I want to be really bad and make a side of cornbread to be bathed in butter to go with it. Ooops, did I say that?? Gotta go shopping tomorrow...

Cornbread with lots of butter sounds good with the chili.  YUM!!!

Cooking can be very therapeutic.
I have been working on a renal-friendly lasagna recipe.
I'll let you know when it's ready.

Husband had ESRD with Type I Diabetes -Insulin Dependent.
I was his care-partner for home hemodialysis using Nxstage December 2013-July 2016.
He went back to doing in-center July 2016.
After more than 150 days of being hospitalized with complications from Diabetes, my beloved husband's heart stopped and he passed away 06-08-21. He was only 63.

Jenna is our daughter, bad bladder damaged her kidneys.
Was on in-center hemodialysis 2003-2007.
7 yr transplant lost due to rejection.
She did PD Sept. 2013 - July 2017
Found a swap living donor using social media, friends, family.
New kidney in a paired donation swap July 26, 2017.

Ahh! That wonderful smell wafting through the kitchen HAS GOT to be Zach's chunky chili! Okay, okay...so I haven't actually made a batch yet this season but it's so darn good I swear I can smell it in my mind. That's right, I dream of a hot bowl of chili and some cornbread. As the weather turns cooler, the taste buds crank up for some hot chili! FOLKS, IT IS TIME!!  :P

Dialysate flow (Qd)=600;  Blood pump speed(Qb)=315
Fresenius Optiflux-180 filter--without reuse
Fresenius 2008T dialysis machine
My KDOQI Nutrition (+/ -):  2,450 Calories, 84 grams Protein/day.

Wife tried to talk me into going to Wendy's.  She likes one of their salads, I end up eating their chili.  It's O.K., just not like I make at home.

She won't let me make it as it gives her 'gas'.   So?  She hates to 'release' at work in the School Cafeteria.

I tell her that doesn't make any sense.  It's Sring Break, NO School.

Women, we will NEVER understand them.

Started with NxStage - April 2015
6 Fistula grams in 5 months,  New upper fistula Oct 2015, But now old one working fine, until August 2016 and it stopped, tried an angio, still no good
Started on new fistula .

Have never forgotten this...During our training to use the NxStage cycler, my husband's stomach began rumbling and bothering him. The nurse walked in just in time to see him make a face and asked what was wrong. I told her his stomach was bothering him. She looked over at him and said "Oh, just let it rip, it's okay, we're use to it". She thought he had gas. He didn't.  ???

Nurse, they've seen most everything, few can surprise them.



Since I am a 'Guy', when I have 'gas' at home I just let it go.  My house, right?

Not according to the 'Wife'.  She would always nag me afterwards that I should have 'gone to the bathroom'.

One cay, after being married maybe ten years, I let one go.   And this I will NEVER forget.  This, the Mother of Our Children, whom I had NEVER ever heard 'fluff'.  She looked at me with an EVIL Eye, lifted one leg, and RIPPED one off.   Telling me "If you can do it then so can I."

I about fell over.  Laughing.

That was about 25 years ago, maybe more.  I lose count.

Zach's Chunky Chili calls for 1/2 teaspoon Tabasco sauce AND 1/2 teaspoon Tabasco Green Jalapeno sauce. My husband always says he likes "all things hot". Like I use to have to tell our old dog, I tell him to knock it off or he can go live somewhere else.

great recipe.  It's hard to make chili when you're so used to using the beans previously.  I now have to make chili without the beans and get used to using things like tomatillos and roasted red peppers. I usually use ground turkey, minced garlic and onions, tomatillos and roasted red peppers and then I sometimes add in a little pasta noodles.

Still Winter here.  That Polar Vortex thing had it down to Minus 5 the other day.

Yeah, I gotta go to the store.  It's time for Chili.

With a few beans and fresh jalapeno peppers diced in.
