Title: Luby's recipes -- other recipes

I have the Luby's 50th anniversary cookbook
if you have a favorite recipes ask me and I will copy it , if I have it
the recipes I have made from this book turn out great
just some examples:

Liver on Onions
Baked Haddock Almondine
Vegetable Soup  (Bubba's favorite)
Mixed Squash Casserole
Fried Green Tomatoes
Fried Okra
Jalapeno Corn Bread
there are many others including cakes

Luby's as in the Luby's Cafeteria?  It was recommended to us when we were in Texas, and it was some of the best food I have ever had.

This is sooooo gooooooood with saltines or cornbread.
An Aggie Favorite!

Vegetable Soup


6 cups beef broth                            1 and 1/4 cups diced potatoes
1 can (15 ounces) tomato sauce          1 cup chopped celery
1 can whole peeled toms,                    1/2 cup chopped onions
  undrained, chopped (15 ounces)        1/8 teaspoon pepper
1 and 1/2 cups chopped carrots            1/2 teaspoon salt-------- I never add

1. in large saucepan or Dutch oven combine broth, tomato sauce, tomatoes, carrots, potatoes, celery, onion and pepper
2. bring to a boil, reduce heat, cover and simmer 30 minutes

this is a most requested recipe

Mixed Squash Casserole

1 cup carrot slices                                      1 teaspoon salt
4 cups squash slices                                   1/2 teaspoon pepper
4 cups zucchini slices                                  1/2 cup crumble corn bread
1/2 cup onion                                            2/3 cup torn or chopped dry white bread - 1/2 in slices
1/2 cup sour cream                                     2 tablespoons butter or margarine, melted

1. heat oven to 350
2. in med saucepan, bring about 4 cups water to a boil- add carrots- reduce heat, cover and simmer 6 minutes - add squash, zucchini and onion
   - continue simmering uncovered 3 to 4 minutes or until carrots are crisp-tender - drain - transfer to large bowl
3. in small bowl, whisk together soup, sour cream, salt and pepper until well blended- pour over vegetables and mix well- transfer to a 2-quart
   baking dish- cover with foil
4. bake 30 minutes
5. in medium bowl combine corn bread and torn bread- drizzle with butter - toss lightly to coat evenly
6. remove foil - top vegetable mixture with corn bread mixture
  continue baking for 5 minutes

I have never had this or cooked it but it is a most requested recipe :o

Mississippi Mud Cake
cake                                                                             Icing
1 cup (2sticks) butter or margarine, softened                    1 and 3/4 cups sifted powdered sugar
2 cups granulated sugar                                                2 cups miniature marshmellows
1/3 cup unsweetened cocoa                                           2 tablespoons plus 2 and 1/3 teaspoons unsweetened cocoa
4 extra large eggs                                                          1/4 cup milk
1 cup chopped pecans                                                   1/2 cup pecan pieces
1 teaspoon vanilla
1 and 3/4 cups all-purpose flour
Garnish
sweetened whipped cream
maraschino cherries

1. heat oven to 350 F- Grease and flour 13 X 9 inch baking pan
2. for cake- in large bowl beat together butter, sugar, and cocoa until smooth and creamy- add eggs, one at a time, beating well aster each
   addition - add flour, pecans, and vanilla - mix just until well blended - pour into pan
3. bake 30 to 35 minutes or until wooden pick inserted in center comes out clean - cool on wire cooling rack
4. for icing combine butter, sugar, marshmallows, cocoa, and milk in medium sauce pan- cook over medium-low heat just until marshmellows
    are melted - stirring frequently- drizzle over cake- sprinkle with pecans and cool completely
    garnish with whipped cream and cherries

I have that cook book to and I love it.  They have a great recipe for fettuccine Alfredo.  We make it once in a blue moon because of the phosphorus, but it is sooo yummy!

I know I am late with this reply, but I thought I had just copied it down wrong.... What soup do you whisk with the sour cream???  I dont see any soup in the ingredients.   :flower;

have you eaten at a Luby's lately
I got a Luanne platter, tea, and an innocent looking little bowl of shrimp salad
and it was 15.00
the little salad was 3.99
Luanne platter's are small servings

Must be priced like our K and W....you pick each dish you want including side dishes individually and need a loan at the cash register.

Twirl, is there by chance a copy of Pat's Texas Sheetcake. Made with the dry ingredients in a large bowl and just pouring a melted mixture over it? I lost mine, and they are famous as brownies.

Luby's is a known hangout for the older crowd and because of this I know they try to cook with little salt and let you salt at the table.  I grew up with a guy who's Dad was a "high-up" in Luby's.  All his children followed in his footsteps.

When I was in the theater we affectionately called the Sunday afternoon crowd the "Luby's Crowd".  It was usually a quite audience because they were full from eating at Luby's before coming to the show.  We could even see some of them sleeping in the first few rows!   :ROFL;


I LOVE, LOVE, LOVE Luby's!    I may have to drive-through for lunch!  LuAnn fried fish - I'm coming for ya!
