Title: Eating Chili - What about the Beans?

Hi,
Les and I love chili in the winter-
(and rite now it is perfect chili weather
here in Jersey) but I am afraid to try it
as the beans I thought were a no-no-
dieticiean said they were very high in
potassium.
What do my good friends on IHD say-
I notice quite afew of you guys eat it-
also, my hubby is on hemo, I know the
foods are different on PD

You can make chili without the beans very easily, this is how i do it:

Ground Beef
onions
bell pepper
stewed tomatoes
salt, pepper, garlic powder
chili powder

Brown ground beef and drain,  throw in all the ingredients and bring to a boil and then cover and lower fire, let cook for about 10 - 15 minutes  VOILA  :clap;

Beans are up there in both potassium and phosphorous, so it depends on what your hubby's lab work shows.  If his potassium is at a reasonable level, and he takes his binders, then a bowl of chili isn't totally off limits.  You can also adjust your own favorite recipe and use fewer beans, or make it beanless.

Suzie, I am gonna try it beanless like you
suggested first, and then maybe next time
just use half the beans I would normally use.
Les's labs are always good- he comes home with
one of those stupid star report card thingees every
month :banghead; Boy, I guess those people at
the unit think we cannot read the actual lab sheet
and understand it

I brown up some finely chopped beef and throw it in the crockpot with a jar of this chili sauce called D.L. Jardine’s Cowboy Kettle.  It makes a nice rich chili that I eat as a dip with tortilla chips or I'll bake a layer of masa over it, like a tamale pie.  I LOVE beans and I don't even miss em.   I've tried to make chili from scratch, but it always comes out watery.   :-\

I also make my chili without beans. 1) Neither hubby or I like them; 2) hubby is doing the low-carb thing again, so beans are off-limits for him. I have several recipes I use. I'll look around and see if I can find them and get them posted.

Chili Con Carne
        
  Serves 5  1 Cup Per Serving 
   
Ingredients:         
          
1 lb lean ground beef
1 cup chopped onion
1/2 cup chopped green pepper
6 oz no-salt tomato paste
2 tablespoons chili powder
1 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1 quart water         

Directions:
In a large pot, brown the ground beef. Drain fat. Add onion and green pepper. Cook until onion is transparent. Add remaining ingredients and simmer 1 1/2 hours. Before serving, measure chili and add additional water to make 5 cups. Heat through.

Your chili recipes are mostly similar to mine, however I use Armadillo meat.

armadillo meat is also good on the grill with barbecue sauce

we use venison in our chili

when we have no armadillo meat or venison, we use chunky chili meat

you can add beans that you soak and make yourself --- less salt --- and less other unhealthy ingredients in canned foods

use the beans sparingly -- my husband prefers chili with little or no beans
