Title: FRESH MUSHROOMS - GOOD OR BAD?
Post by: 2_DallasCowboys on September 30, 2007, 08:07:00 AM
Hi,

Was just wondering what you all would know about mushrooms.  I had heard once
they were ok for hubby as far as potasium goes, now heard that they are high.
Also, does anyone know if mushrooms can be leached like potatoes, would love
to hear some thought on this

Mushrooms are considered high.  Roughly 60 mg potassium per mushroom weighing .6 of an ounce.

So to eat them in moderation by throwing a chopped up one into something isnt going to create much havoc.  Only going overboard will.

oh man. that is bad news for me. I love my mushrooms. And for some reason I thought they were okay, and have been eating them, especially fresh ones, a lot lately. Darn.

Hi - It depends upon the mushroom and quantity. Here's the list I have;

White (reg grocery store mushrooms) - 1/2 cup = 130mg
Cremini/Baby Portobello - 1 medium = 65mg
Portobello - 1 medium = 410mg
Porcini - 1/2 cup = 280mg
Morel - 1/2 cup = 200mg
Maitake - 1/2 cup = 160mg
Enoki - 1/2 cup = 135mg
Oyster - 1 medium = 80 mg
Shitake - 1/2 cup = 60mg
Wood Ear - 1/2 cup = 20mg

This is the book I am using is:
Dr. Richter's Fresh Produce Guide
Author: Dr. Henry Richter
ISBN# 0-9703139-0-X

It is printed by:
Try-Foods International, Inc.

This book had been a life saver for me. Hope it helps.

good list lulu, my point was, no one uses a cup of mushrooms in an omelet, you may use 1 or 2. a 1/2 cup or a cup you probably don't want to eat, however 1 or 2 in an omelet or with a steak, why not.

I agree. A couple are fine, although I would stay away from the portobellos and the baby portobello. But, the regular old white grocery store mushrooms are fine. WHat do you keep your potassium under? I keep under 1000mg a day. Although, these days I don't eat much.
