You really do need to be careful with your diet.

Potassium, either too high or too low  WILL KILL.

Hemo we have to be very careful not to eat very much potassium rich foods.

PD, I couldn't eat enough and had to take 60 units of supplement, and still ended up in the ER once when everything just quit.  Muscle simply would not work.  I couldn't move.   Dr told me I was within minutes of my heart stopping.

Oh!

Hello Ataraxia,
Unfortunately our kidney-friendly diet has to be re-checked on a regular basis, not only because of the diet itself and how well we adapt and adhere to it, but supermarkets often change their food-suppliers and that does not count much for regular healthy customers, but when being in ESRF we have to keep an eye on our potassium-levels and it may be a life-saver if we regularly check-up on everything again and again.
For example : Since starting my dialysis-treatments (for over 3 and a half years now) my husband and I regularly enjoyed a potato-salad in the evenings of dialysis-days. It was a nice taste-treat and went alright with me and my potassium-readings were always perfectly alright, when all of a sudden my potassium-levels were on the rise and there was no explanation, because I am very meticulous with my vegetarian kidney-friendly diet and there are never any changes. After lots of research on our part, the answers finally came along : our supermarket had changed their potato-supplier and the new potatoes from the new supplier suddenly acted on me like real "potassium-bombs". After finding the answer, we instantly banned potato-salad and generally all potatoes from our diet and my potassium-levels reacted instantly and went back to normal again ... This just proves that regular check-ups not only on our diet, but also on the supermarket-suppliers and their food etc. is very necessary and important ... of course, it unfortunately involves lots of thinking and lots of research and work, but it is really important to check-up regularly and it just proves to be very necessary as well...
Good luck wishes from Kristina. :grouphug;

Daughter makes great potato salad.

Sadly, I limit myself to one large bite.  And take a very long time chewing on it until I suck out every last bit of flavor.
