NO NEED TO HOLD THE STUFFING THIS THANKSGIVING
With its high sodium content, stuffing is often the first item to be removed from the customary Thanksgiving menu in a kidney patient's home. The Kidney Kitchen brings this holiday classic back to the table with this low fat, low sodium apple sage dressing
Apple Sage Dressing
(8 servings)
1 teaspoon Canola oil
1 large yellow onion, diced
4 stalks of celery, diced
2 Granny Smith apples, peeled, cored and diced
2 tablespoons ground sage
1 tablespoon poultry spice
1 ˝ cups apple cider
1 cup low-sodium chicken stock
12 cups of cubed low-sodium bread (3/4 to 1 whole loaf)
In a large fry pan, add oil, onions, celery and apples and sauté until onions are translucent. Add sage, poultry spice, apple cider and chicken stock; simmer for 10 minutes. Place cubed bread on a cooking sheet and bake in a pre-heated 400F oven until the bread is brown, turning the cubes occasional to brown all sides. When bread cubes are brown add to the fry pan and mix together. Bake the dressing in a covered 9 X 13 pan in a 350 F oven for 20 to 30 minutes.

This can work. Wife doesn't like to cook so we often meet Daughter and SIL for dinner at the Buffett. I't food, but I much rather roast a bird so I can have left-overs. Ain't nothing better than left-over turkey sandwiches.
Thanks for the stuffing ideas. I seldom ever touch salt, and buy garlic and lemon pounds at a time as I use both extensively. I've recently started using fruits, like these apples and sometimes grapes. So seeing the apples included here made a lot of sense to me.

We've always liked the Stove Top Dressing ever since it came out. My problem with it is the salt. I can see it in my next mornings weight every time. And it takes nearly THREE DAYS to get rid of the salt. I could use all greens bags and pull off the water weight but until the salt is gone it immediately comes right back with my next drink.
I can use this recipe anytime, no waiting for Holidays!

That's pretty close to our family's homemade stuffing recipe that we've used for years and years - except no apples. It's pretty tasty if I do say so myself. I think most homemade stuffing recipes would be pretty easy to make fairly renal friendly though... cut the salt and use low or no sodium chicken broth. Sometimes we throw in an egg to bind it together a little more. Mmmmm...
I do miss Stovetop though. It was such a lovely addition to my roast squash for quick dinners.
