Title: What would you like to include in a consumer forum 'Nutrition & Kidney Disease'

Hi all. I'm Fayme from Australia.
I would like to ask for opinions/suggestion on what kind of information would you like to get from a consumer forum with the title 'Nutrion and Kidney Disease'?

So far i have had a list which included below sessions:

1)-Effects of specific nutrients have on the body and foods containing these nutrient
2)-Cooking demonstration
3)-How to read food labels
4)-Personal stories

It's gonna be one day forum probably running from 10am-4pm.

Please feel free to share your thoughts with me.

All the things my dietitian didn't tell me!   How everyone is different, and to learn to read your own labs and adjust your diet and binders accordingly.  Make sure everyone knows what the target ranges are for each lab.  How to juggle so you can still eat some things that are on the NO list.  A list of different possible binders, and their side effects.  Make sure to note that tums will work in a pinch if you are out to eat without your meds.  Useful lists of foods that are good choices, not just endless lists of "This is high in potassium, these things are high in phos. . . "  Menus or recipes that take into account lower levels of ALL the stuff we should avoid, not just one thing at a time.

I'd still like to know more information about the lab tests and how they read how much potassium and phos are in the body.  When I eat something high in either, how long before it will show up on the lab work?  How fast do these things accumulate in the body and how long does it take them to leave a dialysis patients bloodstream?  When I get bloodwork done on Tuesday, how many days worth of eating is being shown in the results?
