Title: Rep pepper /tomato swap

One of the hardest things for me has been cutting out tomatoes. I love a good plate of pasta. So, my current renal friendly swap is to use roasted red pepper puree in the place of tomato in sauces. Not exactly the same, but pretty dang good.

Also really good on top of couscous and chicken with some Moroccan spices. Yum...

Just be aware that, according to google, red peppers are only marginally better than tomatoes from a potassium point of view:

Red Peppers - 211mg of K+ per 100g (https://www.google.com.au/search?q=potassium+in+red+peppers)

Tomatoes - 237mg of K+ per 100g (https://www.google.com.au/search?q=potassium+in+tomatoes)

I don't know why my potassium always runs so low I take supplements AND always told to EAT MORE.

Just further proof that I am not normal.   I've always been a bit strange.  Or so I'm told repeatedly.
