Title: Dinner Rolls

I did it! I made renal friendly dinner rolls that don't suck! Finally! The recipe will follow soon but for right now....~HAPPY DANCE~

Sorry that took so long, things have been crazy here.

1 cup plus 2 Tbsp warm water
⅓ cup oil
2 Tbsp yeast
¼ cup sugar
½ tsp kosher salt (¼ if table salt)
1 eggs
3½ cups flour

Note: Kosher salt takes up more volume than table salt so ½ tsp of Kosher salt is roughly equivalent to ¼ tsp of table salt.

Instructions

Preheat oven to 400 degrees. (Yes you have to do this first, you'll see why later.)
In a bowl combine water, oil, yeast, and sugar. Allow mixture to rest for 15 minutes.
Mix in salt and eggs and 2 of the cups flour until combined. Add remaining flour ½ cup at a time.
You may need to add a little more flour to get your dough into the right smooth non-sticking consistency, that flour is not factored into the nutrition.
Shape dough into a ball and cut it in half. Do this again and again until you reach 16 equally sized balls.
Place rolls in a greased 9×13 pan or baking sheet. Cover them with a tea towel and place the baking sheet on the stove for 15 minutes.
Make sure that the sheet is in contact with the burner your oven uses as the oven exhaust. This will help the balls rise, it's a poor mans proofer.
Bake at 400 degrees for 10-15 minutes until tops are golden brown.

I must have missed this one first time out, but I printed it out today and will make it the first couple of days I have some energy. Thanks for your efforts.
