I do think that they come down hard on the dietary restrictions a bit too much.  I don't really follow the diet, and haven't for a while, but I do follow some simple rules.

1.  Be careful of fluids.  When you go out to eat, and what you order is particularly salty, don't order a drink
2.  Don't go overboard.  Moderation does work.  If there's cheese in your meal, skip the ice cream dessert.
3.  Know your labs.  If your potassium was high in your last labs, don't nosedive into the plate of creamy mashed potatoes

It's mainly common sense.  I eat what I like, and don't take binders, and the dietician knows this.  She came to see me the other day with a chart showing my phosphorus levels for the past year.  It showed it slowly going down until it was below their target levels.  She told me to keep doing whatever it was I was doing.

I will say however, that I'm not a huge eater either.  If I go out to eat, I generally take half of my food home for lunch the next day.

I have just recently begun to loosen up on the dietary restrictions.  Today, I had a small helping of mac 'n cheese.  Oh how I miss cheese!  I am not on binders, but my labs have all been on the low side of the range.  I am not going to go crazy, but would love to have some pizza this weekend.  Hoping my small cheats don't come back to haunt me on my next labs!   I have also been cooking lots of meals from "David's Cookbook" for dialysis patients.  Almost everything I have made has been really good.  Even my hubby likes it.
