Title: A Weird Question

Hey Y'all!

Been a while since I've been in the food area. I was on here a lot when the boyfriend first got diagnosed and had big plans to publish a cookbook. Those plans got sidetracked when we moved twice (once out of state) and my laptop blew up, taking over a year's worth of research and recipes with it. Yes, I did back up my data but it got lost in the last move. I am still very angry and discouraged by that. SO DISAPPOINTED!  :banghead;

Anyway, to my weird question. If I have a recipe where most of the ingredients are kidney kool (chicken, veggies, rice etc) but a couple aren't (shrimp and smoked sausage), do the unkool items make the rest bad? If the boyfriend picked out the sausage and ate only a few shrimp, would the sodium and phosphorus content of the rest be compromised? I just happen to have the ingredients for jambalaya on hand and thought it would be tasty.

What a shame about the data!  Hopefully your back up will appear as you settle in. 

I doubt the phos content would be changed much on the rest of the recipe.  The sodium tends to easily leach into the surrounding food, though, especially if the food has lots of liquid.  Still, you could add up the totals per serving with everything you add, and see if the small portion sizes of the bad things are low enough to still be on the diet.  It's not necessary to cut all the yummy things out, after all - only limit the amounts.

I agree with jbeany, also i truly believe we shouldnt always deprive ourselves of something delicious, just dont do it all the time... and dont over do it.
an occation treat wouldnt be terrible. just make sure that if hes going to have that, make sure the rest of that day he avoids the bad stuff.

Thanks ladies! The boyfriend is very good at balancing his treats with more strict eating. He seldom falls too far off the wagon. I was just wondering what others thought. I agree about the sodium. It does get around.

Try using 1/2 the amount of sausage.  so you get some of the smoky flavour with 1/2 the amount of sodium.

I've used bacon in some dishes to add a dimension of flavour but only a bit without adding too much salt.
