Title: Chicken again?????

Anyone else sick of Chicken?   I'm to the point I don't want to eat it again for a long long time.

I guess Ground beef is my new best friend.  Been trying to eat grass fed or at least as natural as I can afford without antibiotics and the other stuff they feed cattle.

Also I've been making bone marrow broth lately.  Works great when making white rice as far as flavor.

How about Fish????  WE've been making a delicious Pesto Talapia...  They have ready made at costco which is yum, but we do our own by just taking pesto sauce and putting the Talapia in in for a bit then baking at 400 for about 1/2 hour.  It is so delicious and MILD...  Over, rice, noodles???  some asparagus... our favorite meal right now :)

I am also getting tired of chicken.  I usually have a steak once a week to mix it up.    I am also off eating pork and i can't stand fish.  So we will see.   That's what I'm looking at now, I good chicken breast recipe,  thinking maybea Vodka Lemon Chicken.. If I can't drink it might as we well eat it..

Ground pork and ground turkey mixed together is amazingly good. Made into meatballs and served after being cooked in tomato sauce, even better.

Here's my best meatball recipe, Riverwhispering:

1 lb. chopped sirloin
1/4 cup dry bread crumbs
1/4 cup sour cream
2 Tbsp. fresh chopped curly  parsley
1/4 tsp. salt
1/4 tsp.pepper
A pinch of nutmeg

Combine all ingredients very well.  Form into four flattened meatballs.  Dredge in an additional 1/4 cup breadcrumbs.  Cook over low-medium heat in I Tbsp. butter, 10 minutes on each side.  Serve hot or sliced cold for sandwiches.

When I'm tired of chicken, I make a batch of these and have one each night for dinner--then I'm able to face chicken again!

Oops!  Forgot an important ingredient: 1 tsp. onion powder

I forgot about this recipe I've had for years and It's always been a huge hit with company.


Pollo Scarpariello or Shoemaker's Chicken
A recipe from Cafe Engine, Charlotte, NC
Submitted by River Whispering

Ingredients:

6 Chicken breasts cut up
All Purpose Flour
1/4 Cup Olive oil, more as needed
5 Shallots, minced
3 Cloves Garlic, minced (I use more)
1/4 Cup Dry White Wine
2 Cans Beef Consommé
1 Tbs. Dried Rosemary (again, I use more)
1/4 Tsp. Salt
1/4 Tsp. Pepper
4 Tbs. Butter, melted

1. Cut up the chicken breast; dredge lightly in flour.

2. Heat oil in large, heavy skillet over high heat, and sauté the chicken turning frequently until lightly browned on all sides.
Remove chicken to bowl.
Add more oil as needed to finish up the chicken.

3. Add shallot and garlic to skillet, reduce heat to medium and sauté, until vegetables are softened. Return chicken to skillet & stir to combine.

4. Add wine to skillet, bring to boil over medium heat, scraping up
any browned bits from bottom of pan with a wooden spoon.

5. Stir in stock, rosemary, salt and pepper, cook uncovered until sauce thickens, 10 to 15 minutes.
Remove from heat and stir in melted butter.

6. Serve over a wide noodle or rice.

idk if this is edible for we dialysis folks, but i made it and ate it, it was yummy!
I got some chicken breast, stuffed some cheese in it, (pepperjack) and put some jerk marinade on it. wrapped it in low salt turkey bacon (i removed the bacon off my peice though) and then i made a pineapple chutney, it was SO good.... like i said though idk if its idialysis friendly or not...

im always trying to make new food ideas, because i get very bored with food often.

Stuffed green peppers sound so good right now, and NOT chicken... :)

glm, I am one of those who simply can not eat red or green peppers. However, stuffed cabbage is wonderful and I have always made it with beef. Going to try it with the ground pork, ground turkey combo. I know it is better for dialysis folks. No, I think it is. I will let ya know how it comes out.

I may sound like a wierdo, but I simply love eating chicken  :waving;, yes I know this isn't very healthy, but the best way a chicken can be prepared is deep fried.  I recently bought a cast iron pot, so I'm tempted to make my own version of the double down. :2thumbsup;

I don't make chicken too often though as my wife isn't very fond of it, and I'm not keen on making 2 seperate dinners either.

Sorry River, I thought that pork and turkey were better for us than beef and I was completely wrong. I seriously doubt I will ever get the hang of this diet.
My personal favorite for chicken is browned in olive oil, a ton and a half of garlic powder, then finish cooking in the oven.

My latest obsession has been smoked salmon. Nova Lox with cream cheese, red onion, capers, on an everything bagel. Mmmmmm. I don't eat chicken EVERY day so I guess I am not sick of it. I try to rotate different proteins so I don't get burned out. I eat a lot of eggs.

Never heard that one. My diectition has always told me that ground beef is the best. Beef itself is lowest in Phos. Chicken is higher in phos compared to beef.
THey both have protein in it so both are good to have.

You'd think so, lol! Nah I just happened to spy a nice package at my grocery store and went on a bender.
