Title: Looking For A Chicken Noodle Soup Recipee

Anybody have a good chicken noodle soup recipee they'd like to share? I'm looking for a recipee        :)

Hello. I make a chicken soup, but no noodles. I put boneless chicken breast in the crock pot with a little BBQ sauce for about 3 hours, then cut it up into small pieces. I put it back into the crock with the same juices and add celery and a California blend of veggies and a little water. When it has cooked for 2 hours in the slow cooker, I add a little more water and some minuet rice, then let cook till the rice is done. I like the BBQ flavor .

Oh! That sounds yummy! I never thought of making it without the noodles!  Thanks so much for sharing! I will have to try it! I do love BBQ sauce        ;D

I do not think Mushrooms are on our list, but sometimes I use some low salt cream of mushroom in it too.

I've been waiting until I get paid to go out and buy supplies for chicken noodle soup!

I'm going to buy a whole chicken, simmer it in water with celery, carrots, onion, and garlic for an hour, then take the chicken out and take all the meat off, and put the bones back in and simmer another hour. Put chopped celery, chopped carrot, diced onion, herbs, maybe one diced tomato, and simmer for 20 minutes. Shred the chicken meat and put it back in, season with salt, lemon juice, and pepper. Add the egg noodles and cook until they're ready.

I use my big Dutch oven.

my recipe is more of a dumpling type noodle, but u can sub any kind u want.
I am cheap, and since we arent supposed to do broth, i do it this way.
U take one egg, one "eggshell" full of milk, and one cup of flour. That makes the noodles, roll that out, cut into strips, put the strips into boiling chicken water (u can make ur own broth, that way its much better for u, or if u want to 'cheat' i tend to go for a low sodium chicken broth diluted with water) Im not a big fan of meat so i dont actually put bit of chicken in my stuff, but it my dad does. He puts loads of chicken, from a whole chicken. I tend to add stuff to the broth, like carrots onion and celery.

Actual recipe:
1 egg
1 "eggshell" of milk
1 cup flour
Mix, and roll out, cut into strips
Boil chicken broth, (and cook the onion, carrot, celery if u want) add strips.

It doesnt take long. And like I said, they are more like a dumpling. Good stuff. And if you make it alll homemade, you can really leave out alot of the salt, and fluid!
I season with Mrs Dash!


now im hungry!

I'm wondering if it has to do with fluid restrictions?  Broth would likely count as a fluid intake? Or perhaps the salt if any is added for flavoring?

Any kind of a cream soup, also not great. Italian wedding soup , which is so good, is chicken broth, a little chopped chicken, tiny meatballs and some escarole, which is Italian  spinach type.  Very good.

Goth that makes sense, I wasn't thinking about fluid because I'm not on dialysis yet.  I make my own chicken broth in the crock pot without any salt and I freeze it in one cup freezer jars (by Ball) to use when I cook rice for flavor.    I guess when I start dialysis that will be a whole new learning curve for me as far as fluids.

Do you have a pressure cooker? My recipe calls for a pressure cooker and for a couple months' worth of odds and ends to make the stock first.

I ended up using a slow cooker. If I make soup again, I'll use my slow cooker. I prefer to use that versus the stove. I have a gas stove.......

So, my soup turned out great! I shared it with my inlaws who live in my house also and they really liked it too, my kids and my hubby tried it and they really enjoyed it, so that's good, nobody got sick nor died, so that's a good thing since it was my first time making soup     ;D

I used some seasoning......poultry seasoning, 1/4 tsp of that, 1/4 tsp of salt and 1/4 tsp of pepper too, a little lemon juice and water also and mixed everything together, the stock, I diced up some leftover cooked carrots, and chicken and kind of made a mix of this and that. I took some spaghetti noodles and just broke them up into small pieces and plopped them in about a half hour before I was ready to eat it to get the noodles cooked (I didn't leave them in more than half an hour so they wouldn't go to mush) and it turned out great, I was really pleased with the taste!        :thumbup;

I finally found a renal friendly recipee in a renal friendly book I thought I had misplaced and found this morning........here it is.......

Hearty Chicken Noodle Soup Taken from the Renal Friendly cookbook series called, "Spice It Up"

Prep time: 15 mins
Cooking Time: 45 mins
12 Servings

1/4 cup olive oil
2 large chicken breasts, cubed (total of 1 lb)
1 cup yellow onion, diced
1 cup celery, diced
1/2 cup carrots, diced
1/2 cup cabbage, chopped
1 cup green peppers, diced
1 tbsp garlic, minced
1 tsp ground coriander seeds
1 tsp dried thyme
Freshly ground pepper to taste
1 bay leaf
_______________

3 cups chicken broth
(use a no-salt-added product
_______________

4 cups water
2 tbsp lemon juice
_______________

1 1/2 cups small pasta
(ie. small shells)

1/4 cup freshly chopped parsley

Preparation:

In a large 4 quart heavy bottomed pot, heat oil over medium-high heat for 1 minute and add chicken breast to brown lightly. Add all vegies and spices and continue to cook for 8-10 mins, stirring frequently.

Add broth, water, and lemon juice to the vegie-chicken mix. Cover, turn to high heat and bring to a boil (2 mins) Reduce heat to minimum and let simmer 20 mins.

Add pasta and finish simmering for 5-10 mins depending on the size of the pasta.

Before serving, sprinkile fresh parsley on top and serve.

Suggestion:  Freeze in portions, reheat in the mircrowave and you can have a hearty meal in mins

I didn't even get around to putting in the noodles. I'm planning to heat up smaller amounts and add things to change it. Egg noodles, matzo balls, bulghur wheat, Israeli couscous, hominy and chipotle, coconut and curry, egg drop, lemon and chile, hot and sour...

a cup of mushrooms has a high level of potassiuum. answer......only use 4 or 5  a taste of mushroom is perfectly ok.

I used just a small handful of dried shiitake slices in my chicken soup broth.  :bandance;
