White Christmas Salad
Diet types:
CKD, non-dialysis, Dialysis, Diabetes
Recipe created by patient, Ted, and DaVita renal dietitian Lynn MS, RD, LD from Maryland.
Portions: 6 Serving size: 1 cup
Ingredients
1/4 cup sour cream
1/4 cup mayonnaise
2 cups cooked chicken or turkey, diced
25 red seedless grapes, halved
25 green seedless grapes, halved
1/2 cup walnuts, coarsely chopped
bibb lettuce for garnish
Preparation
In a small bowl, mix sour cream and mayonnaise.
In a large bowl, combine poultry, grapes and walnuts.
Fold sour cream and mayonnaise into ingredients in large bowl.
Chill for at least one hour.
Serve cold on a lettuce leaf with low-sodium crackers or a crisp breadstick.

Helpful hints
Use chicken or turkey leftover from a holiday meal.
Make a meatless salad by replacing chicken or turkey with either diced extra firm tofu and coarsely diced mushrooms or diced cooked egg white and coarsely diced mushrooms.
In the egg white variation, use the whites of hardboiled eggs or cooked pasteurized liquid egg whites.
Nuts are high in phosphorus and potassium. By limiting portion to 1/2 cup the walnuts add 32 mg phosphorus and 50 mg potassium per serving.
Use low-fat sour cream and mayonnaise to cut fat grams in half.

And it's recipes like this that make me want to :puke; everytime I think about the renal diet. It seems like "renal" means "devoid of flavor".
I looked at this recipe and said - bland, bland, bland. It might be somewhat decent if you added some spices for flavor and maybe celery for crunch? It's not too far away from a standard chicken salad or waldorf salad but you can't just slap the main ingredients together and hope for the best.

We actually made and sold this chicken salad in a restaurant. Only difference is no sour cream, all mayo and lots and lots of pepper. It was a big hit with customers.

I think the main difference is that a Waldorf Salad has apples and sometimes a little onion?

I actually think the recipe sounds good. I would add the pepper though and maybe a touch of maple syrup. I think I'll make it and let you know how it turned out.

Anyone ever try this one? How did it taste? Has asparagus, green beans and snow peas and feta...sounds delicious! But renal friendly?

I may never understand how or why they hung the name "Christmas" on it.
I usually pass on the nuts, maybe add an amount of lemon pepper and maybe small chunks, or smashed pineapple. If I wanted something chewier maybe some raisins, regular and the lighter green.

And to finish it off substitute a bit of Ranch for some of the sour cream/mayo.
I believe recipes are merely a rough guide. Add/leave out and make it more to your liking.
