Herbed Omelet - kidney friendly


Ingredients

4 eggs
¼ teaspoon basil
¼ teaspoon parsley (optional)
2 tablespoons water
1/8 teaspoon tarragon
1 ½ tablespoons salt-free margarine
1 tablespoon chopped onion
Instructions

Measure all ingredients.
Saute onions in margarine until tender and remove from pan.
Crack eggs into a small bowl and beat.
Add the water and all the spices to the eggs.
Pour eggs into a frying pan.
As the omelet sets, lift with a spatula to let the uncooked portion of the omelet flow to the bottom.
When the omelet is completely set, add the onion to the top of the omelet and remove from the pan.
Yields: 2 servings
Serving size:  ½ omelet
One serving = 2 meat exchanges

That's pretty close to what I have for breakfast most mornings. Though I put it between two slices of my homemade bread.
