Warm Bread Pudding - Renal friendly
Recipe from Better Homes & Gardens New Dieter’s Cookbook (1992). Submitted by DaVita dietitian Patty from Oklahoma.
Portions: 6 servings
Serving size: 1/2 cup
Ingredients
nonstick cooking spray
2 eggs
2 egg whites
1-1/2 cups skim milk (may substitute with nondairy creamer)
2 tablespoons honey
1 teaspoon vanilla
2 tablespoons rum (optional)
4 slices raisin bread, cubed (3 cups)
Preparation
Spray an 8" round baking dish with nonstick cooking spray.
In a large mixing bowl, beat eggs and egg whites until foamy. Beat in milk, honey, vanilla, and rum or rum extract.
Stir in bread cubes. Pour into the prepared baking dish.
Bake at 325º F for 35 to 40 minutes or until a knife inserted near the center comes out clean.
To serve, spoon warm pudding into dessert dishes.
Helpful hints
Substituting nondairy creamer for milk lowers phosphorus by 32 mg.
One teaspoon of rum extract can be substituted for the rum.
Add a tablespoon of nondairy whipped topping, if desired.
