I have two whole mini-pallets of jars and lids and I want to put them to use. Does anyone have any renal safe canning recipes?

I've never canned, but what are you intending to can?  Pickles would not be good because of the salt.  Pears would be safe for us.

What are you thinking about?

Why don't you make some apple sauce to can.   What i do is a count how many apples I put in the pot and that should be how many portion I get. 
If you don't like apples you can make pear sauce.  Same thing, boil down some pear until mushy add some cinnamon and sugar (optional).
