Title: "Oatmeal" - Rice and Grain Porridge
Post by: Restorer on September 11, 2011, 01:20:43 AM
I experimented with oatmeal tonight, cut with rice to lower the P and K.

2 Tbsp steel cut oats
2 Tbsp 7-grain cereal (mix of grains for hot cereal)
1/4 cup Calrose rice
4 cups water
1 Tbsp cream cheese
largish pinch of salt
brown sugar
cinnamon

Put it all in a small pot on medium heat, bring to a simmer. Turn heat down to low or medium-low, stir often for 15 minutes or so. When it starts to thicken, add the salt, cream cheese, cinnamon, and sugar. Cook another 10-15 minutes (taste it towards to end to see when it's done).

I topped mine with chocolate chips.  :2thumbsup;

That sounds strange.  Was it good?

It's... well, interesting. I've been meaning to try breaking up the rice grains in a mortar and pestle first, so they match the size of the steel cut oats. That would probably make it better. The rice makes itself known when it's still whole. I also want to try boiling the rice first, then adding the oats to cook, so the rice gets softer. It's all experimentation based on oatmeal, congee (http://en.wikipedia.org/wiki/Congee), and okayu (http://www.foodjimoto.com/2011/03/okayu.html).
