June Martin is a Registered Dietitian who has been working with PD, Hemodialysis and CKD patients for almost 10 years at Grand River Hospital in Kitchener, On. She is currently the Chair of the Canadian Association of Nephrology Dietitians and was part of the team behind "Spice It Up!", a series of cookbooks for CKD patients. Fragrant Basmati Rice

1 cup basmati rice
2 tsp olive oil
1 bay leaf
1/2 tsp turmeric
1 1/2 cup water
cardamom
cinnamon stick

Heat oil in sauce pan. Add rice and spices and toast slightly. Add water. Bring to a boil. Cover and simmer for approximately 15 minutes.
