Ginger Pork Escalopes
(Serves 4)     

From The Irish Kidney Association.

1 lb (450 g) lean boneless pork chops
1 onion, finely chopped
1 tablespoon vegetable oil
powdered or minced ginger to taste (eg 1-2 teaspoons)
7 floz/200 ml double cream

Grill the pork chops
Lightly brown onion in the vegetable oil. Add ginger to taste and cook for 1 minute with onion.
Stir in cream and heat gently until sauce reduces a little.
Pour over pork chop to serve.

NOTE: the vegetables in this recipe provide 1 portion of vegetable per serving. If you are on a potassium restriction, you must include this as part of your daily vegetable allowance.

If your cholestorol level is high this recipe is not suitable for you, as it is high in fat.
