Title: Enchilada Casserole

Enchilada Casserole

Ingredients

1 pound cooked hamburger or cooked chicken cut up
Corn tortilla shells
1 small (10oz) can of Enchilada Sauce (mild)
½  to 1 cup cooked white rice
Frozen Mixed Vegetables
Some chopped onion (optional)
Some chopped red peppers (optional)
Cheddar Cheese (optional)
Cream Cheese
Sour Cream

In an 8x8 baking dish spray the bottom with Pam Cooking Spray.  Rip up a corn tortilla in small pieces and layer the bottom of the baking dish.  Then add the cooked (drained) hamburger or cooked chicken pieces.  Then layer the rice, vegetables, onion and peppers.  Sprinkle a tiny bit of cheddar cheese.  Add a few teaspoons of cream cheese around.  Rip up another tortilla shell on top, and pour the can of Enchilada Sauce over the whole thing.

Bake at 350 for 30 minutes.

Serve with sour cream and a side of Frito Scoops (they are fairly low in sodium)

I have made this but not with the vegetables, it is very good, thanks for the reminder Rerun :clap;

I use Doritos in place of the tortilla chips.
