Post by: Bub on February 01, 2010, 08:20:34 AM
Anyone have a good recipe for beef stew or soup that is ESRD friendly. Maybe I simple one that even a bachelor can do?

I found the recipes at the IKA to be superior to most renal-friend ones. I cooked many of them for my dear husband, with excellent success!!

I get a package of fresh veggies allready cut up fom my local market and add stewmeat and barley in the crock pot. I brown the stewmeat in a frypan and add it ti the crock.

You're welcome, Fc.... Hope you're well.....

I used to love buying the bags of prpared mixed veggies, Bill... So much easier and less wasteful than buying and preparing several veg... But recently, all of the prepared bags in my local supermarket's carry a nut allergy warning... Think it's because they prepare veg for Stir-Fry on the same premises, and add a few nuts into the mix....

Total PITA!...

Love...

I made this last weekend; it's great! I just finished what I didn't freeze and I froze 2/3rds:

Roast two chickens, after eating your fill cut off majority of remaining meat, cover carcasses with water in large pot, bring to a boil along with carrots and garlic (I didn't have any onion at home),simmer over night. You could use one chicken and/or buy one already cooked if you want - just make sure they aren't "enhanced" (= injected with salt water).

Next day strain through a colander, and refrigerate. Pick bones for meat to feed to dog.

Next day skim off congealed fat, add wild rice and bring to a boil. Simmer for 25 minutes covered. Add canned corn and chicken from before, chopped into bite sized pieces. Simmer for 10 minutes uncovered. Add asparagus (chopped to 2 inch pieces) and remove from heat and ... It's low salt soup!
