Title: Pre-dialysis diet that is renal friendly, diabetes friendly and low potassium?!?

hi guys,
Just curious if any of you know  of a good resource for menu planning, recipes, sample diets that are both renal and diabetes friendly AND that are low in potassium? My dad is has ESRD, and diabetes and it seems what he CAN eat as part of a low potassium diet, he's NOT supposed to eat to manage his diabetes. He is only managing diabetes w/diet, and not insulin.

another question is, if he does start to eat more foods that are not diabetic friendly, should he start taking insulin? or is that something that will further damage his kidneys?

ugh..this is all so confusing and his doctor hasn't been much help :(

As far as I know, to obtain low potassium in cooking
the advice is to boil vegetables in lots of water
to leach out the potassium, and I boil them for a little longer
to just make doubly sure.
Of course I try to avoid high potassium foods.

There's a cookbook one caregiver put together - Cooking for David - that has some good ideas.

Have you talked to the dietitian at your center?  Mine had a cookbook lending library.  I agree that the "Do Not Eat" lists are not all that helpful.  You need a "Do Eat" list instead.  There's a list of low potassium fruit on here somewhere, too, in the diet and recipe section.

...and because of the many diet restrictions,
   I have noticed it helps me a lot to make a little fuss
   and make a "dull-diet-meal" more interesting:
   candle light, nice music to listen to... or something
   which makes you feel more cosy etc.
   It takes the edge of a desperate situation...
