Would anyone care to share their favorite quick breakfast ideas?
Probably like a lot of kidney patients, my appetite is very poor. If I depend on whether or not I'm hungry to eat, then I'll be in trouble. This morning I wasn't hungry at all but after looking at the Davita recipe site, I saw a recipe for (what we call) a Toad in the Hole. Even though I wasn't hungry, it sounded good so I ate one. It was so good I decided to eat another. What an accomplishment for me - breakfast before 8am!
So, I am making a rotating list of simple breakfast ideas and am going to have the ingredients on hand. It's the best way I know to get breakfast in even when I'm not hungry. (If there's too many steps and I'm not hungry anyway, I will probably skip!)

Hi, Becky,
Oatmeal is always good, but not the instant kind as it is higher in sodium. A little butter and brown syrup tops it off nicely.
I also like an English muffin with fruit spread.

Ditto to all. I couldn't find a thing until the dietitian told me I was Low in pot and phos and prot. Then I starting doing a (scrambed - not on purpose) omelet. I can eat eggs with cheese and peppers but not just eggs. I hope you get some response.

For me, breakfast is anything I have left over. Today I will have the other half of an Avo-Gobble sandwich, which has turkey, bacon, tomato, lettuce and avocado. Sure am glad I was low on potassium this month! I'm just not a big fan of "traditional" breakfast foods for breakfast. It all goes to the same place, so I figure it doesn't make any difference what time of day I eat it!

Oatmeal is high in Phosphorus but if you remember to take your binders it will be okay.
I put a half slice of bacon in a frying pan and just get the pan coated with a little bacon grease. Then I take the half slice out and finish cooking it in the microwave. I put an egg in the hot frying pan and cook it. I put the egg on a white piece of bread and have my half slice of bacon, egg, bread with rice milk and my pills.

3 days out of the week I have 1/2 a cup of cottage cheese and toast.

One of my favorite fast breakfasts is a simple egg sandwich. A toasted burger bun or halved roll, one or two fried eggs with broken yolks, sometimes some ham, and either mustard, or mayo and Sriracha (an Asian chili sauce that goes great with eggs). Sometimes also just a single fried egg rolled up in a small flour tortilla with Sriracha.
If I want something sweet and I can think ahead the night before, I make the chocolate croissants from Trader Joe's (with binders, of course). They have to sit out and rise overnight, but then in the morning you get 4 incredibly good, big chocolate croissants. I tend to only set out and bake 2 at a time.

Fruit, fruit and more fruit. I can't seem to get enough fresh fruit lately, so that's been breakfast. This morning's breakfast was sliced peaches in a tortilla shell. Odd, but tasty.

My body doesn't like food either until I've been up and moving a couple hrs. I make a big batch of egg burritos with onions and peppers and a few mushrooms. Freeze them. Dialysis starts at 6:45 and they said I MUST eat some protein first. So i grab one and go. Helps that we raise chickens just for the eggs. Some days I have cottage cheese and apple sauce.
Jbeany are you getting some good fresh fruit? I bought some peaches the other day, they were hard and had no taste even after sitting on the counter a few days. I want cantelope really bad :(

excuse me but is an egg burrito the same as what I call a breakfast taco? the ingredients you mentioned roll in a flour tortilla? If so, how do you freeze them and then what? Microwave thaw????

Same thing just no cheese. After I have them made I put them in zip lock baggies to freese I keep a few in the fridge so they are not froze then just warm them up in a frying pan. I don't handle micro wave stuff very well.

My diet is this: breakfast: coffee with little milk, 1 apple, half a pear, half a slice of toast with a little soft cheese.

Jbeany are you getting some good fresh fruit? I bought some peaches the other day, they were hard and had no taste even after sitting on the counter a few days. I want cantelope really bad :(
The local Glen's had strawberries and blueberries that were fantastic. The raspberries were quite good too. I added a kiwi for color, and ate the whole batch of fruit salad in two days.

I get home from dialysis at 6.30am and eat the same breakfast before going to bed, one small cup of tea and a undercooked fried egg sandwich with salt ( I know ! ) This style of sandwich is known as a snotty egg fry -up.

Was wondering what to eat this morning but after reading keelbeer post, my problem is solved. Nothing!

Most days, my breakfast is pretty simple. Yogurt, coffee, and a binder. On weekends, I try to make sure I have eggs for breakfast. After watching GoodEats on Food Network, I'm pretty good at a simple omelet. But, honestly, I love a good hard boiled egg. I put it on the stove when I get in the shower, it's ready when I am.
