Title: Cordon Bubba Texas Cuisine - renal friendly --I don't think so

Armadillo Eggs

10 whole jalapeno peppers
12 oz. grated cheddar or Monterrey Jack cheese
1 lb hot ground sausage
10 canned biscuits

remove pepper stems, slice peppers lengthwise, rinse our seeds

stuff with cheese

flatten sausages and shape into patties and wrap them around stuffed peppers

bake at 450 degrees until sausage is browned

Drain on paper towels, Wrap biscuit dough around each piece, bake at 450 degrees until lightly browned

Calf Fries

1 dozen calf testicles
1 egg beaten slightly
flour
salt, pepper ( or no salt)
bacon grease, vegetable oil or shortening

scald calf fries for 3 to 4 minutes
peel off membrane
cut into bite- sized pieces or medallions, then dry
mix salt, pepper and flour
dip into beaten egg, dredge in seasoned flour and fry, preferably deep fried, brown in hot oil

this is always served first at the Southwestern Livestock Show and Rodeo

Sweet Potato Pone

2 cups grated sweet potato
1 cup milk
1 cup sugar
2 eggs
2 tbsp. butter

combine all ingredients
bake in ovenproof casserole dish for 45 minutes or until set

Cordon Bubba Tip
add 1 cup chopped pecans

You mean Armadillos eggs don't have Armadillo eggs in them?  That's Weird.  I make something similar except I stuff with sausage and cheese and wrap in bacon.  We could call that Coranary in Progress....

Once again thank ya.  I have a jalapeno peppers recpie a bit like that. You stuff the peppers the same with the same cheese,  I have used others as well. Then you rap them in bacon and grill them.  Good and tasty. Haha.

But once again thanks I will try them out and let you know what I think.  I dont' think I will be making  the Calf Fries tho.  Kinda scared of testicles.  I will do cheek, and just about every other part.  Testicles are not my cup of tea.

Yea, everybody loves those grilled, stuffed peppers.  And if you have any leftover, put them in the fridge and scramble them with an egg for breakfast.  Very good, but truthfully you can wrap cardboard in bacon and it will taste good.

I would if I could Danny Boy. My dad and I always have lots of fun.  He used to always go with me to my Chemo treatments. Lots of laughs until I started feeling  yucky. Then I would sleep and he would do his cross word.

Flipbob would have loved this - I am not sure how much bourbon would be left for the pie  :-*

Bourbon chocolate pecan pie

1/4 cup butter
1 cup sugar
3 eggs, lightly beaten
3/4 cup light corn syrup
1/4 tsp salt
3 tbsp. bourbon, or to taste
1 tsp vanilla extract
3/4 cup chopped pecans
3/4 cup semisweet chocolate morsels
1- 9 inch pie shell

preheat oven to 375 degrees
cream sugar and butter, combine with corn syrup, eggs, salt, vanilla and bourbon
mix pecan pieces and chocolate morsels, then spread on bottom of pie shell
pour filling over
bake 40 - 45 minutes, or until set

Rerun - this is for you  -- assuming you will touch a martini    :yahoo;

1 750 mi bottle of vodka
4 jalapenos, seeded and sliced
dash of vermouth
l silver of jalapeno

drop jalapeno slices in a bottle of vodka, replace cap and refrigerate 48 hours . (If keeping for more than several days, remove jalapenos.)
for individual martini, swirl vermouth into stemmed cocktail glass, then drain off. Pour 2.5 ounces of chilled jalapeno vodka ( over ice, if "on the rocks"), stir and add a sliver of jalapeno as garnish.
