Only thing i really have to watch is the high phosphorus as im itchy as anything and havent got a binder to suit me yet , but i would be glad of quick easy meals i can make without much effort at the mo . :2thumbsup;

A meatloaf is easy to make and can feed you for a few days.
Soups and sandwhiches.
Everything im thinking is likely no good for you :-(
have you tried Renvela for binders. I take two easy to swallow and for me no side effects.
Your invited to our house and we can have BBQ for a week & ill cook :thumbup;

I ate alot of salads, but that can be a potassium issue. Noodles and white bread are lower in phosphorous that the wheat varieties.

I eat a lot of chicken and rice. I add onions. bell peppers, celery and a few mushrooms. Too change the taste a little sometimes I add pineapple or mandrian oranges. I have a small bowl left and tonight I think I'll add low sodium broth and have soup.

I'm eating chicken salad a lot. In the US, you can get pre-cooked chicken chunks - frozen ones, not canned, if you don't have the ambition to cook the chicken. You just have to watch the sodium and phos content. I add diced green apple, a tablespoon of bacon crumbles for flavor, and 1/4 cup parmesan or romano cheese. Onion and celery are good in it, too. Then I mix it together with just enough mayo to make it moist. Yogurt works, too. The mayo keeps the apple from turning brown, and it holds up in the fridge for quite a while. It's good on bread, tortilla wraps, pita pockets, or just on lettuce. It's reasonably renal friendly, since the main ingredients are apples and chicken. The salty stuff - the bacon and mayo are in small enough amounts that it doesn't make me thirsty. Since you have phos issues, you could skip the cheese, or lower the amount to just a tablespoon for the flavor, although the hard cheeses are better choices for low phos anyhow.
If you don't have cholesterol issues, don't forget the simplicity of any kind of egg dish - nothing cooks faster than scrambled eggs, and the protein is a great choice for a renal diet. Hard boiled eggs are easy to make and are good snacks for your albumin levels.
If you're like me - fruit tastes better than anything else most of the time. During the summer, I live on fruit salad made with grapes, strawberries and blueberries. I'm out right now - where's that "What do you crave?" post? :stressed;

I put two eggs and some pepper spice with a splash of mocha mix in a coffee cup, then microwave for a minute until dry. Put on two pieces of toast with a dollop of butter on the toast and a dollop of mustard on top. A quickie breakfast.

A fried egg with toast is easy and pretty kidney friendly.

I'd eat that egg concoction of yours, Kit, but remember (you don't use a microwave).....
