2 pkgs. (16 oz. each) Jimmy Dean Pork Sausage---- I use hot but mild is fine
1-1/2 cups all purpose baking mix --- I use Bisquit
16 oz. ( 4 cups ) shredded shard cheddar cheese
1/2 cups finely chopped onions--- I never add this
1/2 cups finely chopped celery -- I never add this
2 teaspoons black pepper -- I always forget to add this
2 teaspoons minced garlic --- I never use the garlic or the onions or my husband would not eat them
basically I use the first three ingredients and add a little water to make the ingredients easier to mix
Preheat oven to 375. Combine all ingredients in a large mixing bowl: stir well ( this is where I add liquid to make it mix easier ) Form into 1 inch balls. ( I make mine a little bigger so they do not come out like hard marbles) Place on ungreased baking sheet; bake 18 -20 minutes or until golden brown. Remove from oven; cool for 5 minutes before removing from pan. Serve with cocktail forks or toothpicks. ( I never do that)
may be prepared ahead and frozen uncooked. To bake from frozen: thaw on baking sheet 15 minutes; bake in preheated oven for 20-25 minutes or until golden brown. ( I always freeze baked cheese balls and just reheat)
for firmer texture, add 3 cups baking mix and 2 cups shredded cheese to the ingredient list
( I did this once and the balls did not have as much flavor)
you know ---- use the sausages in the tubes --- there are other brands but Jimmy Dean seems to be the best
these are good will a big bowl of pinto beans
drain on paper towels after taking out of the oven
you may have grease on cookie sheet but you can drain it off
can use any degree of hot sausage or just use mild --- my family like hot hot and hotter
can use any shredded cheese --- mild , sharp or whatever

I was just getting on to check out Pula Deens Sausage ball recipes. I thought hey I am gonna catch up first. And thanks to you I don't have to go goggle it. THANKS! I think I am going to try using Chorizo though this time. I know its crazy high in just about everything I don't need. But Super Bowl is comming up and I am in charge of cooking for our party. So yes once again thanks!

You could sub some stuff if need be. Like some low sodium sausage, and they have a healthy bisquit now that is lower in sodium, use less cheese. I haven't had to watch my phosphorus in a long time, and when I did it was crazy low so I was told to eat lots of greens and stuff. So I am not sure about the phosphorus. But you can always make any recipe to work around your life style. :2thumbsup;

I'd be concerned about fat content too. But I'm always concerned about fat content so that's why sausage is off my list of foods entirely.

Have you tried a lean chicken or turkey sausage? Not all the best flavor but not bad. Turkey you have to be careful its like hamburger if you don't buy the right one its really high in fat. But its out there.

Yeah you have to be careful, a lot of diet stuff dose too. And watch out for the low sodium stuff too. Sometimes it is lower but not by much. Try a health food store. Umm like a whole foods, sunflower, trader joes, wild oats. A place like that. Some major chains will have stuff too. But you are always going to have to sand there and read the backs of everything! Haha. People look at you in the store like your an ass. But you have to do it. Go in the middle of the night you have the store to yourself. lol.

That is why I am using cherizo. I haven't actually eaten cherizo in like 3 years. And growing up I had it a few times a week (in an old scool hispanic family fat isn't an issue). But for the most part I try not to eat stuff I shouldn't be eating. But I do chang stuff when I can even if the tast isn't all that great just cause I feel better. But I do agree chaning stuff isn't always the best flavor.

okay - so here is the truth
I have eaten so many of those in past years that I can hardly stand to look at them now
don't tempt me with a watermelon or won ton soup or hot and sour soup --- thank the Lord that I can not cook or grow any of those
and crab puffs ---- oh, do not let me go on

I'm sorry to be a real stick in the mud, but if a recipe is not "healthy" for people on dialysis, then it shouldn't be listed in this section.
It might be more appropriate in the Off-Topic section [edit] "Other recipes".
I know, I know ... I'll shut up, now.

This is why if you don't buy it or make it, it can't get into your body. Prednisone makes me feel like eating non-stop so I get pretty obsessive about only choosing healthy foods. Please don't think I'm being critical in any way but I have worked hard all my life to not become fat and there are only two ways to do this that are healthy. Don't eat too much fat and do exercise. As a kid I ate everything I loved and was huge. I hated it and once I figured out that it was all within my power, I haven't been back to that place. Now with CKD to factor in I just don't mess with the bad stuff no matter how tasty. No magic, no tricks. I know I would adore the taste of those sausage cheese balls and that's exactly why I'll pass.

Before this gets ugly twirl thank you for the recipe. Like I said saved me some time. And I love these things.
Zach I understand where you are comming from, I just think that its nice treat yourself to something every once and awhile. And this recipe is a nice little treat that we should only be eating every once and a while. And I think we should share stuff like that too. We all have diffrent ways of dealing with our diet. Twirl was just suggesting one way of doing it (eating less).
As for Monrein if you don't like it don't eat it. She was just friendly enough to share a recipe with us. No need to say anything bad about it.

MandaMe, I seem to have offended you. For that I apologize, it was not my intention to offend you or anyone else. I only presented my own view and my own struggles here as well as how I deal with them. I did not say anything bad about the recipe except that it has too much fat, I would not eat it for that reason although I'm sure it's tasty. Twirl and I go back a little ways here on this board, I consider her a friend and I apologize again for any perceived offense to you or anyone else.
I don't in any way see how this is getting ugly. Well I'm off to D. :waving;

Oh Lordy, if you live in the south, sausage balls are on every menu for every party---right Twirl? We have them for every brunch, luncheon, bridal party, baby shower------It isn't who is bringing the sausage balls, it is how many of us are bringing them!! And they freeze beautiful!! just my :twocents;

I don't see anything wrong with a recipe like this. It isn't like someone is going to eat it everyday three times a day. It opened up a discussion on how someone could take it and make it healthier or suit a different diet.
Our local grocery store makes a very healthy turkey sausage in the store. It isn't bad and I have substituted it for regular sausage and ground beef in many recipes.

I only had 2 (really) but I think Len snitched a couple of extra and I froze some and gave my son some when he came and shoveled our deck and walk. I did add some garlic powder and onion powder. Yummmmmmmmmmmmm.

There's been confusion about where recipes should go if they are not suggested for renal diets, so I added something to that section:
Diet and Recipes Section - Please read
All recipes are here, renal-friendly or not.
When posting a recipe please make it clear if it is recommended as "Renal friendly", or if it's just a good recipe you'd like to share; or you're not sure about whether its okay for a renal diet mark it "Not for renal diet."
As one member suggested, the alternative is to start a new section called "Eat this and die" - but let's try it this way for now.

Thank you so much twirl for posting this recipie. I'm going to make them for Saul...he's my taster :rofl; :rofl; We both work at eating healthy but sometimes you just have to do what you have to do.
Paris...boy, you can tell I don't get out..I have NEVER tasted sausage balls....boy am I deprived.
Monrien...I would love to try some of the things you cook and or eat, they sound so good but I would have no clue where to even start to find those items.
MandaMe...sometimes Saul mentions missing Chorizo??? and I have seen it in stores but I have no clue..I know years ago I tried a tortilla wrap that had some in and I think it has to be an either acquired taste or something you grow up with, I just couldn't do it. But there are some German Dishes that I make and the poor man will eat them but never ask for seconds and he says "I'll eat anything"...not. :rofl;

Ramona...I just can't do turkey sausage...I don't know why and who knows I have probably eaten some when other people cook and had no problem. Go figure.
