Title: Cranberry dessert / salad

I tried this last Christmas and absolutely went  :bandance; over it!! It is kidney friendly; just watch your fluid. It tastes like strawberry shortcake to me and I make it all year round.

Cranberry Delight

1- lg. pkg. strawberry jello
2- c. boiling water
1- can jellied cranberry sauce (could use whole cranberry sauce)
1- 16oz. bag frozen strawberries (chopped, if desired)
1- lg. can crushed pineapple, drained
1- lg apple, finely chopped
1- lg./ tall tub of Cool Whip
1- 8oz. pkg. cream cheese
1- c. powdered sugar

Stir jello w/ boiling water until dissolved. Stir in cranberry sauce and fruits and refrigerate until set.

Topping: Mix cream cheese and sugar together until whipped. Fold in Cool Whip and then spread over jello mixture.


This makes a very pretty dessert, so I put mine into a clear glass serving bowl of sorts...mine is a pedestal type of server.



** If you would like a similar salad to serve with your meal, substitue the pineapple and apple with celery and walnuts and omit the topping. I use the whole cranberry sauce with this version. It is a nice change from plain old cranberry sauce and goes great with ham, turkey, chicken and pork!
